Of all the different proteins you can use in your cooking, chicken has to be one of the most flexible and versatile. It has a relatively mild taste that goes well with many different seasonings and ingredients (and it’s a little healthier than red meat, too). There are a few chicken recipes that everyone has tried, typically including a basic grilled chicken breast, fried chicken and maybe a baked chicken. Still, we have a recipe today that might shake up your routine and bring some new life to a familiar ingredient.
Today, we’re going to make a lemon parmesan garlic chicken with vegetables on a sheet pan. Parmesan and garlic always go well together, particularly with chicken, but the lemon adds a whole new layer of sweetness and tartness. Even though the recipe is baked, the final result is so buttery and delicious that it may as well be fried! Once you give this recipe a shot, you’re sure to come back to it again and again. So let’s get started.
Here’s what you’ll need:
Chicken:
- 4 skinless, boneless chicken breasts (or chicken thighs)
- 1 large egg
- 2 tablespoons of lemon juice
- 2 teaspoons of minced garlic
- 1/2 tablespoon of fresh chopped parsley
- 1/2 cup of breadcrumbs
- 1/3 cup of grated parmesan cheese
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
Veggies:
- 8-10 baby potatoes, cut into quarters
- 1/2 cup of melted butter
- 2 teaspoons of minced garlic
- 1 pound of green beans, chopped
- salt
Here’s what you do:
1. To get started, preheat your oven to 400 degrees and get out a baking tray. Be sure to spray down the sheet with cooking oil before getting out a large bowl and mixing together your egg, lemon juice, garlic, parsley, salt and pepper.
2. When the egg mix is ready, dip your chicken breasts into it. Once they’re all dunked, set them on a plate and put them in the fridge to marinate for between 30 minutes to an hour. In the meantime, get out another bowl and mix together your breadcrumbs and parmesan cheese.
3. Next, take your chicken out of the fridge and dredge it in the breadcrumb mix until it’s fully coated, pressing gently on it whenever necessary to pick up the crumbs. When the breasts are ready, put the chicken on your baking sheet and spray the tops of the chicken with cooking oil.
4. Chop up your baby potatoes if you haven’t done so already and put them all around your chicken. After that, mix your butter, garlic and salt together in a small bowl and pour half of it over the potatoes, rolling and tossing them so that they’re evenly coated.
5. When the oven is ready, throw the tray in and let it bake for 15 minutes. When the time is up, take the tray out and flip the chicken breasts, moving the potatoes to one side of the tray. Add your green beans to the tray and pour the rest of the garlic mixture over them. Finally, throw the tray back in and set the oven to broil on medium-high heat for 10 more minutes.
6. Finally, take the tray out when the chicken have turned crisp and golden on the outside and the potatoes are cooked through. Serve everything up with fresh parsley and enjoy!
As you can see, this recipe is incredibly easy to throw together and adds a little additional flavor to a familiar chicken recipe. Though still lighter than a beef dish or a fried chicken, this meal still packs plenty of buttery flavor and texture that the whole family is sure to love.
