Do you have a favorite chicken recipe? The beautiful thing about chicken is that it’s an affordable, relatively healthy protein that goes with all kinds of different spices and ingredients. On the healthy side, you could make a plain grilled chicken with some lemon and veggies to put on muscle and keep your carbs low. On the more indulgent side, you could get a bunch of drumsticks and fry them up, serving them either barbecue or buffalo style with a side of ranch. Although today’s recipe is more towards the indulgent side of things, we bet you haven’t tried this one out before.
Have you got a box of Ritz crackers laying around the house? What if we told you that you could use them for a delicious fried chicken recipe? That’s right, today we’re making a Ritz cracker chicken dish which has plenty of crunch and a nice, buttery flavor that you’re sure to love. We even add in a whole other layer of cheese on top of it all for some added deliciousness. So what are we waiting for? Let’s get started.
Here’s what you’ll need:
Chicken:
- 4 large chicken breasts
- 2 sleeves of Ritz or Cheese-Its crackers
- 1/2 teaspoon of garlic powder
- 2 cups of shredded cheddar cheese
- 1 teaspoon of dried or fresh parsley
- 2 eggs, beaten
- 1/2 cup of milk
Cheese Sauce:
- 2 cups of cheddar cheese
- 2 teaspoon of cornstarch
- 1/2 cup of evaporated milk
Here’s what you do:
1. To get started, preheat your oven to 400 degrees. With that done, begin preparing your chicken breasts by cutting each one into three equally-sized pieces.
2. After that, get out a bowl and crush up your crackers into crumbs. Throw the crumbs with your cheddar cheese and garlic powder as well. In another bowl, mix your milk and beaten eggs together as well.
3. With your mixes ready, dip your chicken chunks into the egg mixture and then dredge them through the mixture of crumbs and cheese. Keep doing this until all the pieces are well coated all around.
4. Next, throw all your chicken onto a baking sheet sprayed with non-stick spray or lined with aluminum foil. When the oven is hot enough, throw your tray in and let it bake for 25 to 30 minutes.
5. When the time is up, take the chicken out and check to make sure it’s cooked all the way through. If everything looks good, you’re ready to make your cheese sauce! Simply throw your cheese in a bowl with cornstarch and evaporated milk. Microwave it for 45 seconds, taking it out to give it a stir. Keep microwaving for 30 seconds at a time until it turns thick and creamy and serve with the chicken.
Although breaded chicken recipes are almost always delicious, this one takes things to an entirely new level. Using Ritz crackers or Cheese-Its adds an entirely new level of savory, salty and cheesy flavor to the meal—and the melted cheese sauce on top is an added bonus as well.
