Of all the many carbohydrates that can serve as the basis of a dish, few are as versatile and underused as rice. Although we all think of rice as a very basic ingredient that mainly comes in one, plain variety, the truth is that rice can be prepared in so many different ways. By throwing just a few seasonings in, it can be aromatic and fragrant when you serve it. On the other hand, there are creamy and savory varieties of rice dishes as well, which is what we’ll be exploring today.
This recipe is for a slow cooked mushroom and chicken rice—and it tastes better than most of the slow cooker dishes we’ve tried recently. The rice cooks perfectly in the slow cooker and the hearty combination of mushrooms and chicken works together so well. After trying this recipe, you may never make rice another way again. So let’s get started.
Here’s what you’ll need:
- 1 1/2 pounds of boneless, skinless chicken thighs
- 1 teaspoon of dried oregano
- 1 tablespoon of minced garlic
- 1 cup of sliced onions
- 2 cups of mushrooms
- 1 15-ounce can of chicken broth
- 3 cups of instant rice
- salt
- pepper
Here’s what you do:
1. To get started, prepare your chicken thighs by seasoning them with salt, pepper and dried oregano. When it’s ready, drop your chicken into the bottom of the slow cooker.
2. After that, throw your garlic, onions, mushrooms and chicken broth into the slow cooker as well and give it a gentle stir to combine it a little. When that’s done, cover the slow cooker up and set it to cook on high for three hours.
3. When that time is up, open the slow cooker and pour in your rice as well. Once again, give everything another stir and cover it up again, setting it to cook for another 30 minutes on high.
4. Finally, open it up and check to make sure the rice and the chicken are cooked all the way through. If everything looks good, scoop it out onto plates and enjoy!
As with some of the best recipes, this one uses very simple ingredients and requires very little effort. By throwing the rice in with the other ingredients, the grains soften up and absorb all the savory flavors creating something much more rich than simple rice and chicken. Still, the process is a little easier than boiling the rice separately and cooking up all the other ingredients in a pan.
While the basics of this recipe are sure to give you a good result, there’s always room to experiment as well. If you want to change the flavor up a little bit, try using different broth other than chicken broth or adding some additional seasonings to give it more flavor. Though the recipe only calls for onions and mushrooms at the moment, you could also throw in additional veggies without doing any harm.
