You Can Make Hasselback Potatoes In A Slow Cooker
As this recipe shows, there's no end to the uses for a good slow cooker.

Although we’ve surely said it time and time again, potatoes are America’s favorite and most popular vegetable. They’re homegrown, they pack plenty of caloric punch and they can be used in practically any recipe you can think of. For snack foods, they’re indispensable as French fries and potato chips. At a holiday meal, mashed potatoes and gravy are a staple alongside a roast or a turkey. But today, we’re working up another classic variation on these versatile root vegetables.

Have you ever heard of Hasselback potatoes? If not, they are a special kind of baked potato which is sliced all along the top so that the in-between slices can be stuffed with fillings of your choice. Typically, these are prepared just like any other baked potato is: in the oven. But did you know that you can also make these delicious snacks in a slow cooker? As it turns out, you can—and we’re here to show you exactly how. So let’s get started.

Here’s what you’ll need:

  • 5 medium potatoes
  • 1 stick of cold butter
  • 5 slices of pepper jack cheese
  • salt (as necessary)
  • chopped parsley (optional)
  • bacon bites (optional)

Here’s what you do:

1. Before getting started, make sure you scrub down your potatoes to get them ready for preparation. Once they’re clean, slice your potatoes up about every quarter-inch but without cutting all the way through.

2. Between each of the slices, cut your cold butter into eighth-inch thick slices (make sure the butter is very cold). Similarly, cut each slice of cheese into eight pieces so that you have 40 pieces.

3. When everything is ready, insert your slices of butter and sliced cheese in the top of each potato in a butter, cheese, cheese repeating pattern. After that, put a slice of parchment paper on the bottom of your slow cooker and put the potatoes on top of it.

4. With everything in the slow cooker, melt the leftover butter and brush it on top of each potato. Sprinkle everything with a little bit of salt as well before covering the slow cooker and setting it to cook on high for four hours.

5. When the time is up, open it up and make sure that everything has adequately cooked through. If it all looks good, sprinkle the tops of the potatoes with chopped parsley and bacon bites and serve!

Needless to say, this recipe is just as delicious as any potato recipe you’re like to have—all with a unique presentation and very little effort since it all gets made in a slow cooker. As with any potato recipe, you can also serve with additional veggies on the side for a more well-rounded meal.
