Everyone loves a good side of cheesy breadsticks, but let’s face it: they’re not the healthiest thing in the world for us. As we get older, our digestive systems can change and sometimes the foods we could eat without consequences as young adults have a much more pronounced effect on us later on. Some of these common issues may include gluten intolerance or leaky gut syndrome, both of which can cause problems for us when it comes to eating a lot of bread. Even still, these are recipes that many of us probably still crave.
Fortunately, we have a healthier and gluten-free alternative that will still satisfy that itch for this cheesy and delicious snacks. If you have some kind of dietary restriction or you’re simply on a low-carb diet for the time being, then this recipe for cheesy cauliflower sticks is just the thing for you. If you’ve never tried it before, cauliflower is often used as a carb replacer on a lot of different diets and has a mild and pleasant flavor when prepared correctly. Once you try these, we guarantee you’ll make them again and again. So let’s get started.
Here’s what you’ll need:
- 1 head of raw cauliflower
- 1/2 cup of shredded mozzarella cheese
- 1/2 cup of shaved parmesan cheese
- 1 large egg
- 1/2 tablespoon of minced garlic
- 1/2 tablespoon of chopped basil
- 1/2 tablespoon of chopped Italian parsley
- 1 teaspoon of salt
- 1/2 teaspoon of ground black pepper
- 3/4 cups of shredded mozzarella cheese
Here’s what you do:
1.To begin, preheat your oven to 425 degrees and get a baking sheet lined with parchment paper ready. If you have a silicone baking mat, you can use that instead as well.
2. Once that’s set, start ricing your cauliflower by coring it and breaking it into smaller pieces. Once it’s broken down enough, put the chunks in a food processor and pulse it until it’s approximately the size of grains of rice. If you have a particularly moist head of cauliflower, squeeze out some of the extra water or dab it with a paper towel before ricing it.
3. After you’ve done that, mix your riced cauliflower with 1/2 a cup of shredded mozzarella, parmesan cheese, an egg, garlic, basil, parsley, salt and black pepper. Mix everything up until it’s well-combined and starts to stick together. When you’re satisfied, lay the mixture out onto your baking sheet or silicone sheet and form it into a rectangle about nine by seven inches and a quarter-inch thick.
4. When the oven is hot enough, put your baking sheet in and let it cook for 10 to 12 minutes. Once enough time has passed, take it out and top it all off with the other 3/4 cup of mozzarella. Put it back in the oven and keep cooking it until the cheese melts and starts to turn brown on the top.
5. Once it’s finally done, take it out and let it cool off for about 10 minutes. When it’s cool enough to handle, slice it into squares or rectangles and garnish it with herbs and extra parmesan cheese. Serve with some marinara sauce if you have it handy!
