These BBQ Chicken Kabobs Are Perfect For A Spring Cookout
These kabobs are the perfect way to break out the grill and celebrate spring.

It has finally happened: winter is over and spring is upon us. Spring means a lot of things to a lot of different people—but one thing that it means is that we can spend more time outside. If you’re living on the coast, it may be time to head to the beach and lay out. Similarly, it also means you can finally fire up the grill and start barbecuing again. After all, is there anything better than a backyard barbecue? In honor of the changing seasons, we have a perfect recipe for your first cookout of the new year.

This recipe for barbecue chicken kabobs is really something special. Although you may be familiar with some of the combinations here, our addition of bacon and pineapple really takes everything to the next level. Is your mouth watering yet?

Here’s what you’ll need:

  • 2 large chicken breasts cut into two-inch chunks
  • 1 1/2 cups of BBQ sauce (choose your favorite)
  • 1 pound of bacon, cut into two-inch segments
  • fresh pineapple cut into two-inch chunks
  • kabobs
  • meat thermometer

Here’s what you do:

1. First, get your chicken prepared by trimming it and then cutting it up into chunks. Throw your chunks in a bowl with a cup of barbecue sauce and let it all marinate for two to three hours. Although this is the ideal way to start this recipe, you can skip ahead without marinating if you’re in a time crunch.

2. Get your bacon ready by microwaving it for two to five minutes—this will vary depending on how thick and how crispy you want it to be. Be sure to cover it up in the microwave so it doesn’t spit grease everywhere! Once it’s done, set it on a plate and let it cool slightly.

3. Now that your ingredients are ready, get your kabob skewers and thread together your chicken, bacon and pineapple in a repeating pattern. You can fold any thin pieces of bacon in half and put them next to chicken pieces, though be sure to keep them far enough away from other pieces that they have room to cook on their own.

4. Fire up your grill and throw the kabobs on it, grilling everything until the chicken is between 155 and 160 degrees in a middle (check it with your thermometer). Be sure to cook on both sides, keeping an eye on it so that it gets the level of char you think is right. Once the kabobs are done, throw the rest of your barbecue sauce on them and wrap them in foil, letting them sit for another five to 10 minutes. After that, you’re ready to eat!

Although barbecue kabobs are a staple of any backyard cookout, these ones are particularly delicious in their combination of flavors. There’s something about the smoky flavor of charcoal combined with the sweetness of pineapple that works unbelievably well—and the smoky savoriness of bacon only adds another level to it.

Although the above recipe is fairly straightforward and reliable, there are always additional ways to spice up these kabobs if you’d like. Along with the above, adding in some onion slices and some peppers can make an already great recipe even better. Let’s face it, you really can’t go wrong with barbecue chicken kabobs no matter what you do.
