There aren’t many things that are better in the world than a good recipe with lots of cheese and some creamy, flavorful Alfredo sauce. Even though Alfredo sauce is most commonly used with all sorts of different pasta, the rich sauce also blends wonderfully with diced potatoes. These diced Alfredo potatoes are also perfect for slow cooker use.

Assuming you have a regular 6-quart slow cooker, the following recipe will be able to provide servings for six people. There’s plenty to enjoy for everyone!

  • 3 pounds of potatoes, preferably large russet or Idaho potatoes [$1.50]
  • 5 cups of grated parmesan cheese, fresh [$2.50]
  • A 15oz jar of Alfredo sauce [$2.00]
  • 3 tbsp. butter [$0.20]
  • ¼ teaspoon of salt and ¼ teaspoon of pepper
  • ½ cup of water
  • Optional: a bit of parsley

The average cost is just $1.03 per serving, which makes it a great budget meal as well. As with all slow cooker recipes, cooking time is rather long at 4 hours, but preparation time will only take you about 15 minutes.

How to get started

You definitely don’t need to be a culinary chef to be able to create this fantastic and flavorful dish, as the slow cooker will do most of the work for you.

Peel the potatoes and give them a quick rinse. Cut the russet potatoes in medium-sized dices and add the blocks to a 6-quart slow cooker.

Next up is the delicious Alfredo sauce. Go ahead and empty the entire jar into the slow cooker and it can’t hurt to give it a quick mix already. There will be some leftover Alfredo sauce in the jar, and we wouldn’t want things to go to waste so use the ½ cup of water to flush out the remainder of the sauce. This will also make the mixture a little bit more fluid.

Last but not least, add freshly grated parmesan cheese into the mix along with the butter. Spice things up a little bit with salt and pepper and mix everything very thoroughly.

Let the slow cooker do its job on the “low” setting for four hours, and you have a winner dish! Feel free to serve with a bit of fresh parsley, as it adds a nice touch of color and additional flavor to the diced Alfredo potatoes.
