Most of us try to eat healthily – at least during the week – and often that means prepping food over the weekend to make it easier to stay on track. A quick and easy snack that will keep you satisfied for the entire week, with healthy ingredients, is energy bites! I typically incorporate some type of nut butter into my recipe to hold me over between meals. I have a few tricks for prepping no-bake, healthy energy bites that will keep you (and the kids) going all week long. As an added bonus, it only takes a few minutes to mix together all ingredients and clean up – plus you’ll likely have most of the items on hand in your pantry!
Peanut Butter Energy Bites
What you’ll need to yield approximately 15 energy bites:
- 1 cup (dry) oatmeal
- ½ cup chocolate chips
- ½ cup creamy peanut butter (I use organic/all natural)
- ½ cup ground flaxseed or flaxseeds
- 1/3 cup honey or agave
- 1 tsp. vanilla
- ½ cup dried fruit (optional)
Directions:
- In a large mixing bowl, stir together all ingredients listed above.
- Lay a piece of wax paper on a baking pan or cutting board.
- Scoop about 1 tablespoon (I use a cookie scooper for uniformity) of the mixture and roll into a 1-inch ball and drop on the wax paper. Repeat with the rest of the mixture.
- Refrigerate to set, about 2 hours.
- Store the energy bites in the refrigerator.
Banana Oat Energy Bites
What you’ll need to yield approximately 18 energy bites:
- 2 bananas, ripe
- 2 cups (dry) oatmeal
- ¼ cup almond or peanut butter (I use organic/all natural)
- ¼ cup honey or agave
- 2 ½ tbsp. chocolate chips
- ½ tsp. cinnamon
Directions:
- Mash up the bananas in a large mixing bowl.
- Stir in the oatmeal, almond or peanut butter, honey/agave, chocolate chips and cinnamon.
- Lay a piece of wax paper on a baking pan or cutting board.
- Scoop about 1 tablespoon (I use a cookie scooper for uniformity) of the mixture and roll into a 1-inch ball and drop on the wax paper. Repeat with the rest of the mixture.
- Refrigerate for 2 hours, allowing the oats enough time to soften.
- Store the energy bites in the refrigerator.

A bonus is that these energy bites can be frozen, so make a batch of each, mix and match for the week and freeze the remaining bites for another time. You can’t go wrong with a homemade, no-bake snack that will keep the entire family (especially you!) energized while on the go!
