Summer may be over, but my love for dole whip can never be chilled. While dole whip is the Disneyland dessert to treat yourself to, did you know that you don’t have spend hundreds of dollars to go to Disneyland to find it? You can make dole whip straight in your own kitchen.

You may be surprised to discover that this sweet treat only requires two ingredients and a food processor to create. It’s extremely quick to make, and you can eat it right away (no need to tell you twice). Whether you’re craving a chilled dessert to cool off or reminiscing about the last family trip to Disneyland, here’s how to make it.

Ingredients:

  • 4 cups small chunks frozen pineapple
  • 1 cup Low-fat coconut milk (or milk of choice, almond, regular)

Directions:

Place the coconut milk and frozen chunks of pineapple into a food processor or high powered blender. You’ll want to blend until the consistency becomes creamy. However, you might notice that after a certain point, it won’t blend anymore. Don’t worry, that’s because there’s not that much liquid in the mixture. You’ll just have to stop several times and scoop down the pineapple.

Keep blending until all of the pineapple chunks are gone and the mix is smooth. Enjoy immediately!
