Looking for a chicken dish that’s easy to make but packs ton of flavor? I recently came upon this recipe and I have to admit, I haven’t made chicken that was this juicy and tender. Each bite is fragrant with spices, which have soaked into the chicken. I was surprised to discover that most of the magic is done through a slow cooker. All you need to do is prepare the ingredients, then toss them in the cooker and wait!
I was worried that chicken might be bland or dry but itself, but I was wonderfully mistaken. Paired with green beans and rice, this simple dish becomes a classic dinner that is sure to make everyone’s mouth water when they smell you cooking. Let’s get started!
Ingredients:
- 1 tablespoon of olive oil
- 4 cloves of garlic, minced
- 1 lb. of baby carrots
- 7 boneless, skinless chicken thighs
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1/2 cup of balsamic vinegar
- 1 onion, sliced
- 1 pound of green beans
Directions:
1. Pour the olive oil and add garlic to the slow cooker. Arrange the bottom with baby carrots, then place the chicken thighs over the carrots.
2. Season the chicken with salt, pepper, garlic powder, basil and vinegar. Top it off with the onions.
3. Cover the lid and cook on low heat for 8 hours OR high heat for 4 hours. Add green beans during the last 30 minutes of cooking time and continue to cook. For best flavor, add in parsley and serve with rice or pasta. Enjoy!
