Are you ready 4 this? No, that’s not a typo. You (yes, you) can make deliciously tender chicken, infused with the spices of salsa, without any effort at all. All you need is 4 ingredients, 4 hours, and less than 4 minutes of prep time for all this to work. While you can add shredded chicken to any meal (quesadillas, taquitos, with rice, etc/) , I find that it works perfectly in chicken tacos.

INGREDIENTS:

  • 4 boneless, skinless chicken breasts (about 2 lbs total)*
  • 2 cups favorite salsa
  • salt and pepper
  • fresh lime wedges

DIRECTIONS:

Place your raw chicken into the slow cooker and cover it with the salsa of your choice. Season with some salt and pepper before slow cooking on high for 4 hours, or low for 6-8 hours.

Shred the chicken in the slow cooker and serve immediately, or refrigerate for up to 5 days.
