Ready for the ultimate comfort food recipe? Warning: you’re gonna need a lot of space in your heart to take on this hearty meal. While chicken soup or the occasional casserole may be enough to satisfy my cravings, there’s nothing like slow-cooked brisket to satisfy your soul.

It’s actually perfect that we’re using a slow cooker for this recipe, since brisket is the best meat to slow cook. It is made up mostly of connective tissue and slow, elongated cooking allows these fibers to be gelatinized, giving it a wonderful, silky texture. Not only can you access the rich natural flavor of brisket, but with only a couple of ingredients and a lot of onions, you’ll be able to cook the heartiest meal ever. Let’s go!

INGREDIENTS:

  • 1 tablespoon olive oil
  • 1 1/2 pounds yellow or red onions (about 2 large onions), sliced into half moons
  • 3 1/2 pounds beef brisket
  • Coarse kosher salt and freshly ground black pepper
  • 6 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce

DIRECTIONS:

First, you’ll want to pour olive oil into a pan and cook the onions on medium heat for about 20 minutes. As these are cooking, take the brisket out of its packaging and season the meat generously with salt and pepper. Sear the brisket in a pan until you get a nice, golden brown crust on both sides of the meat. Move the meat in a slow-cooker insert, fatty side up.

Sprinkle the minced garlic over the meat. When the onions are lightly caramelized, pile them on top and around the meat. Pour the broth, Worcestershire sauce, and soy sauce into the slow-cooker.

Cover and cook in the slow cooker on low for 6 to 8 hours or until the brisket is very tender. Let it rest for at least 20 minutes before serving though. The brisket can be sliced into pieces or shredded immediately and served with the onions and juices.
