Desert is great when it isn’t too difficult to make. When the craving’s hit, you don’t wanna be busy preparing it for too long. That’s why recipes like this are a hit among people with the sudden cravings.

This little sponge cake recipe isn’t hard to make at all – perfect for whipping up when you’re a bit short on time.

Sponge cakes are especially enjoyable with coffee. They’re a great breakfast option, and are also great for chilling after work with an espresso or two.

That, or you could just have one for desert.

It begins with 2 eggs and a bowl. Crack them in, and separate the yolks into another bowl.

Since you need the yolks for later, it’s absolutely vital that you don’t break the yolks. So make sure you have fresh eggs and gentle hands.

Now this may feel strange with no yolks, but beat the eggs for 1 minute.

An electric egg-beater or mixer could be of help here if beating it for a minute could strain your wrist.

Next is to add some sugar – about 1 cup of it. Add it into the bowl with the yolk-less eggs that you’ve just beaten for a minute, and beat the mixture again. This time, you want to aim for stiff peaks when beating the mixture.

Now, it’s time to come back to those yolks in the other bowl. Add them in one at a time.

That means add one, beat the mixture, add another, and beat it again. Nice and simple.

Up next is 1/4 cup of all-purpose flour. Add it gradually and gently.

And while adding it, mix – yes, not beat – the mixture in the bowl. Be gentle and thorough as well.

Now, take a 5-inch pan and line it with grease oil and baking paper.

Pour your mixture into said pan. Every last bit of it!

There’s no oven needed for this next step, but you can use one if you’d prefer it. Take a pot and place a stand at the bottom, then heat it over the stove for 5 minutes – don’t add the mixture yet!

Cook the cake mix on low heat for 20-30 minutes. Or if you’re using an oven, bake it in a preheated oven at 160℃ for 20-30 minutes.
