Use a muffin tin to make these delicious jalapeno popper cheese bites
This recipe is delicious and it's a 2-in-1. The leftover bits after baking make delicious cheeseballs.

These jalapeno poppers and balls are great snacks when your friends and family are gathered and just chilling.

They are fun and easy to make, no need to worry about fancy cooking styles.

They’re a favorite everywhere they’re served.

Here’s how we are doing it, starting with the ingredients.

Jalapeno Cheese Balls Ingredients:

    • 16 oz Cream Cheese, softened
    • 1 Tablespoon Mayonnaise
    • 1/2 cup minced fresh Chives
    • 1 cup Jalapeño, seeded and finely diced
    • 6 – 8 slices of Bacon
    • 1/2 cup Sharp Cheddar, shredded
  • 1/2 medium Red Onion, thinly minced
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Cayenne Pepper

Jalapeño Popper Bites Ingredients:

  • 2 cups Panko Breadcrumbs
  • 2 cups shredded Cheddar Cheese, plus more for topping
  • 2-3 large Eggs
  • 1 tsp. Kosher Salt
  • 1 tsp. Black Pepper Nonstick Cooking Spray
  • 10 oz Cream Cheese
  • 4 strips Bacon, cooked and chopped
  • 4 Jalapeños, seeded, diced, plus 24 sliced for topping

Prepare the oven to about 375℉.

While that is heating up, cook the bacon in the non-stick pan until golden brown.

Get a big bowl and pour in the shredded cheddar cheese, bread crumbs, eggs, salt, and pepper. Mix them together until well incorporated.

Use the small muffin pans if you have them and make sure the pan is oiled.

Get small dollops of the mixture and roll them into balls, then place each into the muffin pan.

Press the balls until they form into cups.

Now, chop and dice the jalapenos finely.

Though it is up to you how big or how small the dices are. You can opt to include the seeds while dicing or not.

Get your fried bacon and dice it as well.

In another bowl, add the cream cheese make sure it’s at room temperature.

Add the diced jalapenos and bacon to the bowl. Add salt and pepper to taste.

Mix and incorporate all the ingredients using a spatula.

This mixture will fill up the small cups we made from the muffin pans. Add a generous amount to each cup, then off to the oven for about 10 to 15 minutes.

Up next is preparing the cheese balls.

Chop the red onions and dice them well. We will only use half of that big onion. Mince another set of jalapenos as well.

Place them into the bowl and add cream cheese. Pour in cheddar cheese, some spices, and mayo, and mix everything well.

Chop the remaining bacon into fine pieces and place them into a pan and mix with some shredded cheddar.

Make some small balls of the cream cheese mixture and roll each of them into the bacon and cheese we have in a pan.

Make sure that the ball is evenly covered with the bacon bits.

When you have them prepared, either put them in the fridge to chill until ready to serve or get the baked poppers and enjoy both with the rest of the gang.
