The Ingredients
- 1 ½ lb. Baby yellow potatoes
- 1 tsp. salt (for boiling the potatoes)
- 2 tsp. Fresh d ill
- Rosemary
- Olive oil
- ½ tsp. Ground pepper
- ½ tsp. Salt
- 1 tsp. Garlic powder
This recipe involves two parts: boiling the potatoes and baking them.
Boiling the Potatoes
First, boil the potatoes in a pot with around 1-2 inches deep of water and a teaspoon of salt.
Boil them until they are fork tender, around 15 minutes or less, in medium-high heat. Don’t let it boil for too long because the potato will end up mashed instead of “smashed.”
While your potatoes are boiling, you can prepare and chop your fresh herbs. You can use any herb you like, but this recipe suggests dill and rosemary because those two go well with potatoes.
Once your potatoes are perfectly fork-tender, take them out of the pot and drain the water. Let it cool for a few minutes and prep them for baking.
Baking the Potatoes
Preheat your oven to 425 degrees Fahrenheit. You can do so while boiling the potatoes or while cooling them down.
Grease your pan by drizzling or spraying some olive oil on the entire surface. A teaspoon or two will do.
Start placing the potatoes on the pan and slowly smash them with a glass or measuring cup to about a quarter of an inch. Do not do it too much so it won’t get squashed and mushy. This is also why it is important to boil the potatoes just around being fork-tender.
Once all the potatoes are mashed, sprinkle them with salt, pepper, and garlic powder. You can also add a bit of rosemary, but don’t put too much because they might burn while you bake them. Lastly, drizzle some more olive oil on top.
Make sure that the oven is fully heated before you pop the baking pan into the oven. Bake for 45 minutes or until they’re golden brown and looking crispy.
