What could we give away this Christmas?
It is one question we all have every holiday season.
We want to give away something fit for the occasion, simple yet adorable, and something from our hearts.
Cookies may be the answer.
How about an assorted cookie box?
Aren’t those expensive? They sure are, if you buy them in stores.
Plus, you’re not sure if they really taste great.
So imagine how exceptional it could be to just make your own.
Now, you might think that preparing assorted cookies can be a lot of work, but what if you are using one cookie base for all your cookies?
One base for many cookies
Emma Fontanella of Emma’s Goodies assures her viewers that the cookies won’t taste the same.
You will make soft, melt-in-your-mouth cookies and divide them into equal parts.
Then you add the different ingredients needed for your cookies.
Excited? We are too.
Here’s how to do it.
Cookie Dough Base:
- 750 grams or 6 2/3 sticks of soft room temp Butter
- 300 grams or 2 1/2 cups of powdered sugar
- 3 room temperature X Large Egg Whites
- 900 grams or 6 cups + 1/2 cup of All purpose Flour
- 3 tsp. of Vanilla
- 1/4 tsp of Salt
Making the base dough:
Using your hand mixer, mix your butter, vanilla powdered sugar, and egg whites.
Once combined, add your flour and salt in three additions.
Take your time until you have a soft and fluffy dough.
Don’t worry about it being too soft.
Remember that this is just the base dough.
Divide into five equal parts.
Ingredients for Linzer Cookies:
- Base dough
- 60 grams of 1/2 cup of Almond Flour
- 40 grams or 4 tbsp. All Purpose Flour
- 1/2 tsp. of Almond Extract
- Jam of your choice
Ingredients for Gingerbread Style Cookies:
- Base dough
- 2 3/4 tsp. of Ginger
- 3 tsps. of Cinnamon
- 2 or 3 tsp. Cocoa Powder
- 40 grams or 4 tbsp Flour
Note: For a stronger gingerbread flavor, add more ginger.
Ingredients for Vanilla Butter Cookies:
- Base dough
- Piping bag and a tip of your choice.
Ingredients for Sugar Cookies:
- Base dough
- 50 grams or 5 tbsp. All Purpose Flour
- 1/2 tsp. Vanilla
Ingredients for Chocolate Sugar Cookies:
- Base dough
- 60 grams or 7 1/2 tbsp. of Sweetened Cocoa
- 5 tbsps. of hot Milk
- 20 grams or 2 tbsp. All Purpose Flour
- Melted good quality chocolate to fill the cookies
Note: If you’re using unsweetened cocoa powder you can add a tablespoon of icing sugar.
Once you have successfully divided the dough, take one and add the additional ingredients.
Making the cookies:
Mix it really well and place it on a tray between two parchment papers.
Flatten using a rolling pin and let it cool in the fridge.
Get another bowl of base dough and proceed with the other cookie recipes.
Once you’re all done, take one of the chilled cookie doughs, flatten it to 1 cm thick and begin cutting the shapes you want.
Do this to all your cookie dough and place them on a baking tray laid with parchment paper.
Bake at 340℉ for 15 minutes.
Let them cool and then add your frostings, jams, or drips.
Now, all you need are boxes, ribbons, and cards. Place assorted cookies on each box and design as you please.
