For the dough:

  • 3 3/4 cups all-purpose flour
  • 12 tablespoon cold butter
  • 1 tablespoon sugar
  • 1 1/2 teaspoon salt
  • 1 cup water

For the stuffing:

  • 2 lbs lean ground beef
  • 2 small bell peppers (chopped)
  • 1 Anaheim pepper (chopped)
  • 1 small onion (chopped)
  • 4 minced garlic cloves
  • 2 teaspoons Mexican oregano

  • 2 teaspoons thyme
  • 2 teaspoons parsley
  • 2 teaspoons basil
  • 2 teaspoons paprika
  • 1-2 teaspoons crushed red pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 2 teaspoons salt
  • your favorite melting cheese

To begin, pour a little olive oil into a saucepan and saute the peppers for about five minutes.

Add the onion and cook for another two minutes.

Add the meat, garlic, and spices, and use a spoon or spatula to “break” the meat and mix it well with the vegetables.

Cook for about eight minutes

Cover with a lid, remove from heat, and move to the side until you prepare the dough.

In a big bowl mix the flour, sugar and salt. Add the butter (diced), making sure that it’s cold.

Mix with your fingers until it becomes like sand.

Then, pour in the water and start kneading until the dough that forms doesn’t stick to your fingers.

Rolling the dough

Once the dough is ready, dust the clean counter with some flour, and start taking pieces of dough to make your empanadas.

Roll the dough with a rolling pin as if you were making tiny tortillas.

Once you’ve rolled the dough out, add some cheese and a couple of tablespoons of stuffing and cover the empanada, securing the ends.

Do this until the filling is gone.

Once the empanadas are ready, put them in a baking tray and leave them in the fridge to firm up for about an hour.

Keep the empanadas in the fridge until the oil is ready for frying.

Cooking the empanadas

Pour about three cups of oil into a frying pan over medium to med-high heat (or 365℉), and wait for it to heat up.

Once the oil is heated, fry the empanadas 3 or 4 at a time until they turn a golden brown color.

Serve with guacamole, salsa, sour cream, cheese sauce, or anything you prefer. They are delicious.
