The love and passion that street vendors put into their food create some truly beautiful treats that make our mouths water.
But you don’t have to take to the streets to find unique confectionery treats.
You can make them in your own home. You just need a little inspiration and a place to start.
This street vendor blueberry ice cream roll recipe is the perfect jumping-off point.
Once you get it down, you can start making your own creative tweaks to it.
Ice cream rolls are often made on a professional cold plate that keeps the ingredients chilled enough to form the “ice” in ice cream. It basically firms up your cream and makes your ingredients easier to roll.
You can skip the fancy equipment and use a baking sheet that you put in the freezer.
The basis for making ice cream rolls is mixing cream, sugar, fruit, or other ingredients you want in your ice cream.
The ingredients are chopped up and mixed over a cool plate as the cream firms. Once it is firmed enough it is scraped into rolls.
If you’re doing this at home with frozen pans, you might want to use some sweetened condensed milk to create a thicker mixture that will be easier to roll.
This recipe from Chatelaine also uses yogurt to help firm things up. Here’s what you’ll need to get started…
You’ll need:
- Two rimmed baking sheets
- 4 serving bowls
- food processor
- whisk
- Steel spatula or bench scrape
- tongs
Ingredients:
- 1 cup frozen, then thawed blueberries
- 1/4 cup sweetened condensed milk
- 1/2 cup of 9% vanilla yogurt
- 1/2 cup of 35% cream
Step 1: Take out two baking sheets and put your four serving bowls in the freezer
Step 2: Toss your blueberries, sweetened condensed milk, and yogurt in your food processor. You might need to scrape down the sides as you go until everything is smooth. This could take about two minutes.
Step 3: Half of this mixture should be poured into the middle of a baking sheet. You’ll want to spread it out to create a good thickness for rolling, but you don’t want to cover the entire surface of the sheet because you’ll need space around this puddle to scrape your rolls. Place this into your freezer until it is firm to the touch. Should take about an hour.
Step 4: Do this with the other half of the mixture on a second tray and freeze. You’ll also want to throw your steel spatula or bench scrape into the freezer for at least 15 minutes before you roll your ice cream.
Step 5: Take out a baking sheet and place it on a tea towel so the tray doesn’t move around when you start rolling. Place your tray long ways and use the edge of your spatula where the puddle starts and push your spatula toward the other end of the pan to make a roll. Repeat until all your mixture is rolled.
Step 6: Use tongs to transfer your rolls to a frozen serving bowl and serve immediately. If your mixture gets too loose just refreeze.
This method tosses chilled or frozen blueberries on a tray with some cream and a drizzle of sweetened caramel. Then they are chopped over the cooling plan until everything is fixed and the ice cream freezes enough to be rolled.
