When someone says “comfort food”, what do you imagine? If you’re anything like most Americans, your favorite comfort food is probably warm, hearty, a little salty, and most likely, cheesy.
This recipe hits all the marks.
This recipe is the perfect comfort dish, as it doesn’t only contain cheese. You’ll also get your potato fix – and potatoes are considered the original comfort food, going way back to the 1970s.
Although you’ve used these ingredients before, you’ve had them like this.
Simply called “meatballs with potato puree and vegetables”, this recipe is hearty, homey, and even a bit healthy, thanks to the addition of shredded cabbage.
If you have a bit more time on your hands after work, you can whip this dish up using foods that you most likely already have in your fridge.
Not only is it delicious, it’s so much easier than it looks.
Kids and adults alike should love this recipe, so if you’re ready to give it a go, here are the steps to follow.
You will need:
For the puree:
- 5 potatoes
- 50 grams of cheddar cheese
- 3 tablespoons of milk 30 ml
- 1 teaspoon of salt 4 grams
- Allspice, mint
For the meatballs:
- 500 grams of ground beef
- 2 eggs
- 150 grams of cabbage
- 3 tablespoons of vegetable oil 30 ml
- 2 cloves of garlic
- 1 onion
- 1 teaspoon of salt 8 grams
- 3 tablespoons of wheat flour 60 grams
- Black pepper, cumin, paprika, thyme
- Parsley
For the sauce:
- 2 tablespoons of tomato paste 60 grams
- 1.5 cups of water 300 ml
For the top layer:
- 100 grams of cheddar cheese
1. Prepare Your Ingredients
First off, add your potatoes to a pan of boiling water and put it on a high heat. Leave the potatoes to boil until they’re soft.
In the meantime, take your cabbage and chop it finely, ready to make the meatballs.
2. Make the Meatballs
Gather the ingredients needed for the meatballs, including the shredded cabbage. Combine the ingredients in a large bowl, mixing with your hands until everything is well combined.
Shape the meatballs into oval patties and place them into a lined baking dish.
By the end, you should have 10 meatballs taking up most of the space in the bottom of the dish.
Use your fingers to press the insides of each meatball, compressing the middle and forming a well in each patty.
3. Make the Potato Puree
When your potatoes are ready, put them into a large bowl and mash. Add the puree ingredients and stir to combine.
Form smaller oval patties out of the potato puree and place each patty into the sunken sections of the meatballs. Top with a sauce made from tomato paste and water.
4. Bake and Enjoy
Finally, sprinkle the dish with a good helping of cheese and bake in the oven for between 35 and 45 minutes, until the dish is cooked evenly through and the cheese has reached your desired consistency. Remove, add some herbs, and enjoy comfort food at its finest.
There’s a lot going on in this recipe, but it’s the sort of comfort dish you could make on routine once you got familiar with the steps involved – a bit like lasagne.
