Mint is one of the staple herbs you must have in your garden.
It is a handy herb to have in your home. You can chew or boil mint leaves to aid indigestion and improve irritable bowel movement syndrome. The aroma also aids in improving any cold and its symptoms.
Its taste and aroma also make it a kitchen staple.
It adds a cooling effect to any dish and can taste a bit sweet, too. Depending on its variety, it gives off different flavor: Apple mint adds an apple scent to your dish, citrus mint adds flavor, while chocolate mint gives off a chocolatey, mild sweet taste.
It’s a very flexible ingredient, too.
Mediterranean cuisine uses mints in savory dishes and sauces, and it’s a popular addition to drinks such as hot green tea, mint juleps, and mojitos. You can also use mint for baking and add that freshness to your baked treats.
Here’s a cookie recipe that you can try with your mint leaves.
Here are the ingredients:
- 20 pieces Mint leaves
- ½ cup White sugar
- ½ cup Butter (softened)
- 1 Egg
- 1 tsp Baking powder
- 1 1/3 cup Flour
First, place the mint leaves and sugar in a bowl.
Using a handheld electric chopper or blender, mash them together until the mint leaves are finely chopped. This process will also blend the leaves and the sugar together creating a thick consistency with a coarse texture.
Add the egg and butter into the bowl.
Continue blending all the ingredients together until properly mixed. These additions will lighten the color of your mixture.
Then, add flour and baking powder.
Get a spoon or spatula and continue mixing the ingredients until it’s thick enough – like cookie dough.
Now it’s time to form your cookies.
Get a spoonful of your dough, roll it in your hand, and flatten it a little. You can place a drop of oil and spread it all over your hand so the dough won’t stick.
Line a pan with a baking sheet.
Place all the formed cookie dough on the pan and bake at 356 degrees Fahrenheit for 15 minutes.
And just like that, you have your tasty Mint Cookies.
You can add cashew or pecans to add a little crunch to your cookie. You can also add a few unsweetened chocolate chips for a Mint Chocolate delight.
