All you need to do is chop your veggies and dice your potatoes. Then beat your eggs, pour them in the veggie mixture and whisk well until well incorporated.
In a pan, fry your potatoes and add them to the mixture. Pour some of the final mixture in a pan with some oil, and then place in the middle of it. Add the remaining mixture and cook until set.

Ingredients:
- 10 eggs
- salt & pepper
- fresh chopped parsley
- oil for frying
- 1⅓ lb potatoes
- 2 small onions
- 1 wheel of soft cheese
Directions:
Chop the parsley and onions and dice the potatoes.
Beat the eggs in a big bowl and add the parsley, salt, and pepper.
In a pan, fry the diced potatoes in some oil, until they are crispy and have developed a golden brown color.
Add the potatoes and onions in the egg mixture.
In a pan, heat some oil and pour 1/3 of the egg and potato mixture in it. Cook until it is set, and then place che cheese in the middle of the pan.
Cover the wheel of cheese with the remaining mixture and continue cooking over medium heat, until it’s solid. Then, turn the omelet upside down and cook until it’s golden brown.
Remove from the pan and put in a serving plate.
Serve and get ready to surprise your guests with the melting heart of this omelet.
