Though slow cookers are useful for a wide variety of meals, there are some dishes that are a very natural fit. For example, most of us have probably tried to make pulled pork in a slow cooker at some point in our lives. Aside from meat though, slow cookers are particularly adept at making beans taste delicious. If you’re looking for a low-effort meal that will serve you and your family for basically the whole week, a hearty chili may be the way to go. And we have a great recipe for just that purpose.

Today’s recipe is for slow-cooked kielbasa and barbecue beans with everything thrown in. Though it takes about five hours to prepare, the resulting chili is a rich and flavorful stew that the whole family is sure to love.

Here’s what you’re going to need:

  • 2 15-ounce cans of black beans, drained and rinsed
  • 2 15-ounce cans of cannellini beans, drained and rinsed
  • 1 15-ounce can of garbanzo beans, drained and rinsed
  • 1 small yellow onion, diced
  • 1 cup of ketchup
  • 2 tablespoons of yellow mustard
  • 1 tablespoon of Worcestershire sauce
  • 1 teaspoon of cumin
  • 1 teaspoon of ancho chili powder
  • 1 tablespoon of apple cider vinegar
  • 1/4 cup of brown sugar
  • 1/4 cup of honey
  • 1/4 cup of molasses
  • 2 cups of chicken broth (low-sodium)
  • 1/2 pound of bacon cut into 1/2 inch pieces
  • 2 pounds of kielbasa cut into 1/2 inch pieces
  • 1 bunch of parsley chopped roughly
  • Here’s what you do:

1. Once you’re ready, throw all your ingredients in the slow cooker except for your sausage. Stir the entire thing with a spoon to make sure it’s evenly combined.

Although this recipe is fairly simple and straightforward, the resulting chili truly needs to be tasted to be believed. The above recipe provides the basic blueprint but as always, once you’ve tried this recipe a few times you can start to experiment. If you don’t like the beans in this mixture, you could switch things up by mixing in some pinto or navy beans. For even more delicious texture, you could even add some cheese to the mix. Finally, you can also dress each of your bowls of chili however you want in addition to the instructions above. Feel free to scoop in some sour cream for extra flavor or even some sliced green onions to make the flavor pop. Above all, have fun and let us know how it goes.
