For A Twist, Try This Lemon Garlic Greek Potato Recipe
With lemon zest and garlic flavors, these potatoes are anything but plain.

Potatoes are one of America’s most popular and widely consumed vegetables—and for good reason. Aside from being a hearty side that goes with almost any dish, they also come packed with fiber, potassium and plenty of other trace minerals that the body needs. Above all, potatoes can be seasoned in so many different ways that they are an indispensable kitchen staple. Still, they also get a reputation as being a somewhat basic or “boring” vegetable.

Fortunately, we have a recipe that will inject some new life into your potato dishes! Unlike the more straight-forward savory flavors of American potatoes, this recipe adds in some citrus and mustard to give everything a zestier, lighter flavor with a garlic kicker.

Here’s what you’ll need to get started:

  • 2 pounds of yukon gold potatoes, cut into wedges
  • 4 cloves of minced garlic
  • 1/2 cup of extra-virgin olive oil
  • 1/3 cup of lemon juice
  • 2 tablespoons of mustard
  • 1 tablespoon of dried oregano
  • 1/2 tablespoon of dried basil
  • salt
  • pepper

Here’s what you do:

1. First, preheat your oven to 400 degrees. Get out a baking sheet and line it with a piece of paper as well (though a Silpat will also work wonders here).

2. Get a large mixing bowl and combine your olive oil, garlic, mustard, lemon juice, oregano and basil. Whisk these ingredients together well and season everything with salt and pepper.

3. Next, add your potatoes to your sauce and toss everything together, making sure all the wedges are evenly coated with flavoring. After that, move your potatoes to your baking sheet and throw them in the oven. If you’d like, you can also add a layer of aluminum foil to the top to lock the flavor in.

4. After that, bake your potatoes for an hour. If you put foil on top of them, take them out after 50 minutes to pull the foil layer off and put them back in for another 10 minutes to finish up. When you take them out, they should all be golden brown. Let them cool for about five to 10 minutes before you serve them!

When done correctly, this recipe results in truly delicious potatoes with a delightful mix of flavors. On their own, these Greek lemon potatoes are a great snack or a salad topping, but they can also be served with many different dishes. If you’re going all the way Greek, you could put them alongside a pot roast or a roast lamb shank. Still, a lemony roasted chicken recipe would also do the trick!

As far as the potatoes themselves go, you can also do a few simple tweaks after they’re done to take the flavor up a notch as well. If you want, you can also buy some feta and sprinkle it over the potatoes for a cheesy taste, or add some olives as well for even more authentic Greek flavor.
