No matter how good our diets are, it seems like most of us could always use a few more servings of vegetables in our lives. Still, how do we make eating vegetables a little more fun and delicious? After all, eating salads every day might be a good habit to get into, but it’s also kind of boring after a while. The trick is to find recipes that include vegetables with other ingredients as well. Fortunately, we have one particularly tasty veggie dish for you today.

If you’ve ever eaten asparagus, you know that it has a signature flavor. But what you might not know, however, is that it tastes delicious baked and with cheese—go figure right? On a serious note, this recipe for cheesy baked asparagus has taken the internet by storm and will hopefully find a place in your cooking routine once you try it for yourself.

Here’s what you’ll need:

  • 2 pounds of asparagus stalks, trimmed
  • 3/4 cups of heavy cream
  • 3 cloves of minced garlic
  • 1 cup of freshly grated parmesan
  • 1 cup of shredded mozzarella
  • salt
  • pepper

Here’s what you do:

1. Before anything else, make sure you let your oven preheat at 400 degrees. Once that’s ready, start preparing your asparagus stalks by slicing off the fibrous ends. After they’re ready, lay your asparagus down in a shallow baking dish.

2. Next, pour in your heavy cream and mince up your garlic cloves if you haven’t already. Sprinkle those throughout the pan as well and season the entire mixture liberally with salt and pepper before adding in shredded mozzarella and parmesan cheese. With that, you should be ready to pop the entire thing in the oven!

3. Bake your asparagus in the oven for about 25 to 30 minutes, or until you can see the cheese turning golden brown and bubbly. When you take the dish out, the asparagus spears should all be tender as well. For some added crispiness and bubbles, you can take your dish out of the oven a few minutes early and broil it in the oven for two minutes at the very end to finish it off. Once it’s done, you’re ready to serve!

As you can see, this recipe is about as simple as it gets—but the results are so delicious. Asparagus has a very unique flavor which combines a stringy texture with a bitter and slightly sweet taste. Fortunately, the combination of parmesan and mozzarella compliments it all perfectly, adding some butteriness to the entire thing that make it more pleasant to eat. Finally, the chopped up garlic also gives the dish an extra punch of flavor.

If you like the basis of this recipe, there are other ways to take the same approach with similar veggies as well. If you’re a big fan of green beans, try doing a variation on this recipe with those instead for a similarly tasty meal. Broccoli also works! If you really want to step things up, try experimenting with some different cheese as well—we hear that Gruyere works in these meals as well. As always, have fun with it and enjoy.
