Quick And Easy Recipe For Grandma’s Classic Chicken Dish
Tastes as good as grandma’s, but easier to make.

The weather’s cooling down, so we’re going to need comforting meals that’ll warm our bellies and our souls. However, not everyone has a lot of time in their schedule for cooking – especially during these busy months.

Luckily, a slow cooker is a great solution to it all! By using one, you can make those hot, craveable dinners without tons of work (or having to be tied to the kitchen). Can we say win-win?

Below is a slow cooker recipe for the ultimate comfort meal, Chicken and Dumplings. It’s both easy and leads to mouthwatering results!

Here’s what you’ll need to make “Crock-Pot Chicken & Dumplings” according to Delish. (4 servings)

Ingredients:

  • 1 onion (chopped)
  • 1 1/4 lb. boneless, skinless chicken breasts
  • 1 teaspoon oregano
  • kosher salt
  • ground black pepper
  • 2 cans cream of chicken soup
  • 2 cups chicken broth (low sodium)
  • 4 sprigs of thyme
  • 1 bay leaf
  • 2 celery stalks (chopped)
  • 2 carrots (chopped)
  • 1 cup frozen peas (thawed)
  • 3 cloves of garlic (minced)
  • 1 tube of refrigerated biscuit dough
  • freshly grated Parmesan (optional)
  • 2 tablespoons of parsley (chopped)

Step 1:

Add the onion to the bottom of the slow cooker in an even layer. Then, set the chicken breasts inside, and sprinkle in the oregano. Season the chicken with salt and pepper.

Step 2:

Add the cream of chicken soup to the slow cooker, followed by the chicken broth. Place the thyme and bay leaf on top.

Now, cover and cook for three hours on high. Delish says, “or until the chicken is cooked through.”

Step 3:

Remove the thyme and bay leaf (they can be discarded). Using two forks, shred the chicken breasts.

After the chicken is shredded – mix in the celery, carrots, peas, and garlic.

As you’ll see in the photo below, it looks pretty amazing already!

Step 4:

Open up the refrigerated biscuit dough and separate the biscuits. Cut each one into four pieces. Next, add them to the slow cooker on top of the other ingredients.

“The heat in the slow cooker will help the biscuits rise and “bake.”

Cover and cook for an additional hour on high (until the chicken has a 170° F internal temperature, the biscuits are all the way cooked, and the veggies are tender).

Step 5:

Sprinkle parmesan and parsley on top to complete the chicken and dumplings dish. You are now ready to serve!
