Who doesn’t like chicken? And who wouldn’t love to have a warm chicken meal prepared and waiting for them in the kitchen when they come back home from work?

Now, supposing you don’t live with a partner/roomie who likes cooking- or with your mom for that matter- and you still want to find delicious warm food in your kitchen after a long 8-hour shift at work, Todd’s Kitchen is here to prove that this is possible.

And you don’t even need to guide anyone through the recipe. You can do all the preparation beforehand, and just leave the chicken in the crockpot to cook for as long as you’ll be at work.

Todd’s Kitchen, a famous Australian Youtuber who started his channel SimpleEasyCooking in 2011, is a home cook who enjoys sharing traditional, simple recipes with the YouTube community. This “crockpot chicken” recipe is one of those.

Todd shows how he takes a whole chicken and puts it in a crockpot, he drizzles some olive oil on it, then simply rubs a spice mix he made earlier on the whole chicken, adds a quartered onion, and lets the whole thing cook for about eight hours on low heat.

As he explains, one can also cook the chicken on high heat for four hours, but he has found that letting the chicken cook for eight hours helps all the spices be infused in the chicken and it also makes the meat more tender.

Of course, it’s convenient to put the chicken in the crockpot morning and remove it when you get back from work, when all you really need is a nice warm comfort dinner.

Let’s see what ingredients Todd used in his recipe.

  • one whole chicken, rinsed and dried, using a paper towel
  • drizzle of olive oil
  • 2 teaspoons paprika
  • 2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 1 onion, quartered

The instructions for this recipe, really, couldn’t be easier.

In a bowl, mix all the spices together until well combined. Take the chicken and put it in the crockpot, making sure there is no excess water there. Pat it down with a paper towel to make sure it’s dry.

Drizzle some olive oil and smear it on the whole chicken. Add the spices and, using your hands, rub them on the whole chicken. Try to rub the spices evenly on the chicken so there are no chunk, and making sure all parts of the chicken have been coated in the spice mix.

Arrange the quartered onion around the chicken, and cover with the lid. You can choose to cook the chicken on high heat for four hours, or on low heat for eight hours. The second option might take significantly longer, but it makes the chicken incredibly tender and it gives the spices time to get infused in the meat.
