Try This Slow Cooker Meat Stuffed Butternut Squash Recipe

Slow cookers are some of the most useful kitchen gadgets we can have because we can use them to cook virtually anything. Though home cooking is great, sometimes we just want to throw everything in a pot and forget about it until it’s done. Slow cookers are even good for more unusual or unorthodox recipes in some cases. For example: have you ever tried your hand at cooking butternut squash? Even if you haven’t, we’ve got a delicious recipe for this creamy vegetable for you today.

This slow cooker recipe for slow-cooked stuffed butternut squash may not be what you’re used to—but it couldn’t be easier to make (or more delicious). The combination of textures and flavors of the beef and the squash may surprise you.

Here’s what you’ll need:

  • 1 medium butternut squash, halved with seeds taken out
  • 2 tablespoons of olive oil
  • 1 pound of ground beef
  • 1 tablespoon of fresh sage, finely chopped
  • 5 cloves of minced garlic
  • 1/2 cup of freshly grated parmesan
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper

Here’s what you do:

1. First you’ll want to prepare your squash. Slice the butternut squash in half and take the seeds out. After that, drizzle olive oil the entire thing and season it with half a teaspoon of salt and a quarter teaspoon of pepper.

2. Next, get a bowl and mix together your ground beef, sage, garlic, parmesan, salt and pepper. Stir everything evenly to make sure it’s evenly combined!

3. Once your mix is ready, stuff your ground beef into the squash where the seeds used to be. After everything, put your squash into a slow cooker with the skin side down.

4. Once it’s all set, cook the whole thing on high for about two hours. Once it’s all done, pull it out and throw some extra parmesan on top to finish it off. Enjoy!

At the end of it all, your meat should be nicely seasoned and delicious while your squash should be creamy and soft. The combination together may surprise you and hopefully, it’ll be a regular part of your dinner routine! As always, you can experiment with this to fit your needs. If you want to cut back on calories a little bit, try substituting some chicken sausage in place of the beef we used. You can also switch out the cheese flavor once you have the hang of this.
