Add Avocado To Your Egg Salad For A Delicious Creamy Snack

Do you like egg salad? If you’re like most of us, you probably have a soft spot for egg salad somewhere in your heart—after all, it’s definitely a staple recipe for barbecues and parties. There’s something about the soft combination of hard-boiled egg with the creaminess of mayo that makes this one such a favorite. Still, although everyone is probably familiar with the basic taste of egg salad, today we have a fun twist on this familiar recipe that kicks the flavor up a notch.

Today, we’ve got a recipe for an avocado egg salad which tastes even better than the original. Avocados have a creamy and delicious flavor that mixes perfectly with egg salad—but there’s also a few extra ingredients thrown in to balance out the flavors.

Here’s what you’ll need:

  • 1 medium avocado, peeled and pitted
  • 2 hard-boiled eggs, peeled and chopped
  • 2 tablespoons of Greek yogurt
  • 1 teaspoon of fresh lemon juice
  • 1 tablespoon of minced cilantro
  • salt
  • pepper

Here’s what you do:

1. First, boil your eggs like you would any other recipe. After they’re boiled, carefully peel and chop them up into little pieces. In the meantime, prepare your avocado as well by peeling it and removing the pit.

2. Next, get a medium bowl and throw in your avocado. Mash it up with a spoon until it gets chunky. After that, throw in the rest of your ingredients and mix it together with a spoon until the entire thing is creamy.

3. The recipe really is that easy—let it cool perhaps and you’re done! Serve this with toast or some chips and enjoy.

As you can see, this delicious recipe is about as simple as a recipe gets. Still, there’s always room to switch things up and innovate. For one thing, you can also swap out the Greek yogurt for sour cream or the more classic mayonnaise if you’d like. Similarly, you can use lime juice instead of lemon juice and you can include other herbs as well—feel free to try out minced parsley, dill or chives instead of cilantro.
