Pink Flamingo Cake Is The Fun Dessert For Your Next Party

When it comes to dessert, is there anything better than a freshly baked cake? Though we certainly all have our own favorite meals, there’s something special about serving up cake at a birthday party or any other celebration. Although having some cake is definitely better than having no cake, sometimes a special celebration calls for a special kind of cake as well. Fortunately, we have just the recipe for these kinds of occasions.

Have you ever heard of a pink flamingo cake? If not, don’t worry—we hadn’t either until we made this delicious treat! For those who don’t know, pink flamingo is, as its name suggests, a bright pink cake which is jam packed with cherry flavor and other sweet goodness. When it’s baked, the batter is light, fluffy and uniquely fruity. And let’s face it: a big part of the fun of this cake is just how fun it looks when it’s on the platter. So what are we waiting for? Let’s get started.

Here’s what you’ll need:

Cake:

  • 1 package of white cake mix
  • 1 package of cherry jello mix
  • 3/4 cups of vegetable oil
  • 3/4 cups of buttermilk
  • 3 large eggs
  • 1 teaspoon of vanilla extract

Frosting:

  • 1 can of crushed pineapple
  • 1 package of instant vanilla pudding
  • 1 container of Cool Whip (or similar brand)
  • 1 jar of maraschino cherries with juice

Here’s what you do:

1. Before getting started, preheat your oven to 350 degrees. In the meantime, get out a 9×13-inch baking dish and grease it up. Next, get out a large mixing bowl and beat together your cherry jello mix, vegetable oil, buttermilk, eggs, vanilla extract and white cake mix with an electric mixer. Beat it all until it’s just combined before pouring it into your baking dish.

2. When the oven is hot enough, put the baking dish in it for 30 to 35 minutes. Check it with the toothpick test at the end to be sure that it’s cooked all the way through! If it looks good, take it out of the oven and let it cool.

3. Next, get a large bowl and throw in your crushed pineapple and juice with your halved cherries. Put the puddling mix in on top and fold in your Cool Whip with a quarter cup of cherry juice as well. Mix it all up until it turns smooth and add more cherry juice as you see fit.

4. When the cake is cooled, frost the top of it with your pudding mixture and let it all sit in the fridge for two to three hours. After that, take it out and serve!

As you can see, the actual recipe behind this cake is relatively simple. Still, the result is a delicious and somewhat unusual cake with a bright and cheerful presentation that is sure to liven up any party. Although the recipe above calls for a pudding-style frosting, you can depart from the written recipe as you wish and add in your own frosting choice as well (cream cheese frosting sounds good to us).
