This Upside Down Pecan Cake Will Be Your New Favorite
Throw your pecans in and flip when it's done for a one-pan dessert.

Different parts of the world have different preferred desserts as well. Although certain dishes like ice cream are more or less universal, something like a chocolate stuffed croissant is much more uniquely French. On the other hand, a freshly baked apple pie is more American (and an apple strudel is German or Dutch). Still, the recipe we have for you today is unique to the Southern United States.

Today, we’re doing a delicious and sultry dessert that comes right out of Georgia. This recipe for an upside-down Georgia pecan cake is one of the most delicious baked treats we’ve had in a while. Although the ingredients are simple enough to put together, the end result is a delicious rich and soft cake with a crispy, savory nut flavor as well. As an added bonus, the entire process can be made in one bowl as well and requires very little clean-up. After trying this recipe, you’ll definitely want to make it again and again. So let’s get started.

Here’s what you’ll need:

Cake:

  • 2 cups of flour
  • 1 cup of brown sugar
  • 1 cup milk
  • 2/3 cup of softened butter
  • 2 large eggs
  • 1 tablespoon of baking powder
  • 2 teaspoons of vanilla
  • 1/4 teaspoon of salt

Topping:

  • 2 cups of chopped, toasted pecans
  • 1 cup of shredded coconut
  • 2/3 cup of brown sugar
  • 6 tablespoons of melted butter
  • 2 teaspoons of ground cinnamon
  • 2 teaspoons of vanilla extract
  • 1/2 teaspoon of salt

Here’s what you do:

1. To get started, preheat your oven to 350 degrees and line a 9×13-inch pan with aluminum foil (with enough to overhang the edges as well). Grease it up with non-stick spray as well. When that’s ready, spread your pecans, brown sugar and the shredded coconut in the pan.

2. Next, sprinkle the pan with cinnamon and salt, drizzling the entire thing with vanilla extract and melted butter as well.

3. After that, get out a medium bowl and beat together your 2/3 cup of butter with a cup of brown sugar on medium speed with an electric blender. Keep doing this until it turns creamy and turn the speed down to low, adding the eggs in one at a time. Finally, add your vanilla and mix that in as well until it’s well combined.

4. Add your baking powder and salt in as well, mixing everything up on low. Add half of your flour as well before adding milk and then the rest of flour, mixing everything up well between each stage.

5. Next, pour your batter over the pecan mixture in the pan and bake everything together for about 35 to 40 minutes. When that time is up, do the toothpick test to make sure the cake is cooked through as well.

6. Finally, run a knife along the sides of the pan so that the cake gets loose and let it cool for about five minutes. After that, invert the pan onto a platter so that the cake spills out of it. Let it cool off for another 15 minutes before serving it!

As you can see, the process of putting this cake together is incredibly easy. Put your pecan layer in the dish first before adding your cake batter, bake the entire thing and at the end, your cake will assemble itself when you turn it over!
