Can a boxed cake be better than a bakery cake?

Most people will say it is impossible, but Nerissa Nikole may tell you otherwise.

Nikole shared a YouTube video about how she created a full-sized, moist, and delicious cake for her grandfather using a pre-mix.

How? She didn’t follow the instructions.

If you’re curious, here are the steps to create a two-layer vanilla cake at home.

You’ll need:

  • 1 box of Cake premix (Betty Crocker Super Moist French Vanilla)
  • Jell-O french vanilla pudding
  • Your choice of frosting.

On the box, you’ll see what you need to add to make the cake.

Nikole changed the following:

  • 1 cup of milk instead of 1 cup of water
  • 1 cup of butter instead of 1/2 vegetable oil
  • 2 additional eggs since hers were small in size.

If you have larger ones, you can follow the recipe notes.

The steps couldn’t be any easier.

Get one large bowl and a small one. Then prepare your ingredients and melt your butter in the microwave.

Pour the cake mix into the big bowl, followed by the pudding powder mix.

Next, add the eggs and butter. Mix well and make sure that there are no lumps.

Pour batter into two 9″ nonstick pans.

Preheat your oven to 325° and bake according to package instructions.

Once that is done, make sure to let them cool or do what Nikole did. She designed the cake the next day.

When you’re ready to design the cake, just prepare your frosting and design it the way you want it.

She made two frostings.

One berry-flavored, and the other plain French vanilla.

That’s it. It’s really simple, and the taste will have a major upgrade!

The cake is creamier, softer, and more flavorful because of the ingredients that she swapped.

Of course, we have more tips.

  • Always use your better judgment when swapping the ingredients, just like Nikole did. Since she would be using three small eggs, she added two more.
  • Don’t crack and dump the eggs. If your eggs are bad, they will ruin everything. Nikole cracked an egg and placed it in a smaller bowl before transferring it to the mixture.
  • Make sure not to undercook the cakes. Do the toothpick test and follow the package instructions. Because this cake uses lots of milk, eggs, and butter, undercooking it will make it spoil soon.
  • When using two are more frostings, make sure that they complement each other.
  • Don’t forget to add a crumb coat and let it chill for a few minutes. Doing so will seal in the crumbs.

Baking a cake isn’t just something you do out of boredom.

It’s love, talent and passion combined.

Of course, it will take a while before you perfect a certain recipe, and just like what Nikole said, follow the steps and make sure to try and practice.
