Dry Ingredients:

  • 3 cups of all-purpose flour
  • 1/4 cup of sugar
  • 1 1/2 tsp of salt
  • 1 tbsp of baking powder
  • 1 1//2 tsp of baking soda

Wet Ingredients:

  • 2 1/4 cups of milk
  • 1/4 cup of vegetable oil
  • 1 tbsp vanilla extract
  • 1/4 cup apple cider vinegar
  • 3 eggs

Topping options:

  • Whipped salted butter
  • Maple syrup
  • fruit of choice
  • whipped cream

The first thing that you’ll need to do is to mix all your dry ingredients.

Prepare all the dry ingredients and then mix everything really well.

You can choose to sift your ingredients if you want.

Let’s move on to our wet ingredients.

You just have to mix all the wet ingredients and incorporate them until well-blended.

Mix the wet and dry ingredients together.

Pour the wet ingredients into the bowl with the dry ingredients.

Here’s another trick:

Instead of mixing them together until well- incorporated, just fold the mixture around 20 -25 times and that’s it.

Leave it alone and let it rest.

Remember that this is the last time that you’ll mix the pancake batter. Resist all temptation to mix it again.

Prepare your electric grill, or pan and put your butter, and spread it around.

Once it’s hot enough, scoop your batter and place it on your electric grill.

Remember not to disturb your batter.

Just scoop one and place it in your pan.

Don’t be tempted to stir the batter. We don’t want all those bubbles to pop.

Once your grill is filled with pancakes, set the remaining batter aside.

Resist your stirring thoughts!

Allow your pancakes to cook and absorb that butter. Get your plastic spatula and wait.

Don’t turn your pancakes just yet. Remember to wait for those nice bubbles to pop.

Flip each pancake away from you.

This avoids the butter from splattering towards you. After flipping the pancakes, don’t push them down. We don’t want the pancakes to be flat.

You know that they are done when you lightly press on one using your finger and it springs back.

– Don’t skip the baking powder and baking soda because these are important ingredients if you want to achieve that light and fluffy pancake.

– Frank suggests using whipped salted butter as it gives your pancake extra flavor and crispiness.

– Allow your pancake to form bubbles. Don’t overmix it. This is one secret to having soft and fluffy pancakes.

– Make sure that you have everything you need close. You don’t want your butter to burn while you are looking for your tools and the pancake
batter.

– If you can, try getting a berry spoon. Frank says he loves this as he gets just the right amount of batter.

– When flipping your pancake, don’t scrape the bottom. Place the spatula and give it a quick push. That should get the pancake smoothly.
