When’s the last time you had homemade meatballs for dinner? Even if you haven’t made them in a while, you probably have memories from when you were a kid of being in the kitchen and making meatballs with your mom or your dad. It was always super easy: all you would have to do is roll out a package of ground beef, maybe mix in some chopped carrots or some onions, sprinkle it with parsley and then start kneading everything together. Once everything was mixed, you could reach in with your little hands and scoop it into balls.

Although every family probably has its own tried and true homemade meatball recipe, it can still pay to spice things up from time to time. Fortunately, that’s exactly what we plan on doing today. For as much as kids love meatballs, they’re also very excited whenever juicy burgers are served as well—particularly if there’s bacon involved. So what if you could cross those two recipes for a simple and delicious dinner? If this all sounds good, this easy recipe for bacon cheeseburger meatballs is just the thing for you. Honestly, we can’t believe we didn’t think of this sooner!

Here’s what you’ll need:

  • 1 pound of ground beef
  • 1 egg
  • 2 tablespoons of flour
  • 2 tablespoons of milk
  • 1/2 pound of bacon cooked and crumbled
  • 1/4 cup of crushed french fried onions
  • 8 ounces of cubed cheddar cheese
  • aluminum foil

Here’s what you do:

1. To get started, preheat your oven to 375 degrees. While it’s warming up in the background, get a large mixing bowl out and combine your egg, ground beef, flour and milk. If you already have fried bacon ready, crumble it and throw it now. Otherwise, use this time to get out a pan and fry your bacon (or else bake it in the oven). Once your bacon is in there, add in your crushed french fried onions as well.

2. After all your ingredients are in, mix the entire thing up thoroughly with your hands or with a wooden spatula or spoon. Once everything is evenly combined you can start on the fun part: shaping your mixture into little meatballs!

3. After you’ve got all your balls lined up, take your cheddar cheese block and cut it into cubes if you haven’t done so already. When you’re ready, carefully push a cube of cheese into each of the balls and reform it so that the cheese is completely surrounded by meat on all sides.

4. Next, get out a baking pan or a cookie sheet and line it with a sheet of aluminum foil. Put all your meatballs on it with a little bit of space between each one so that they don’t stick. Once your oven is hot enough, throw the sheet in and bake everything for 20 to 25 minutes.

5. When the time is up, cut into a meatball to make sure it’s cooked through. Once they’re done, enjoy!

As you can see, this recipe is just as simple as any other homemade meatball recipe you may be used to—the only extra step is to cook bacon that you mix in as well. Although we all love a good bacon cheeseburger, making them the entire meal can be a little too much sometimes. With this recipe, you can still enjoy the exact same delicious taste in bite-sized little pieces!

Just like our other recipes, the outline of this one is adaptable to your purposes as well. Though we’ve already got the onions covered, you could also add in other vegetables that you like on your burgers as well (provided they can hold up to the heat of an oven). Swapping out the cheddar cheese for Swiss can also punch up these flavors in a different way. No matter what you choose, this is a recipe you’ll return to again and again. Make sure you have some ketchup and mustard on hand!
