If you want to have an alternative pancake recipe without worrying about the extra calories, then this option is totally for you! This recipe aims to have no sugar, no oil, and no flour added.
These pancakes are unbelievably delicious!
Here are the ingredients:
- 1 cup old-fashioned oats (82g)
- 1 cup sugar-free vanilla yogurt (245g)
- 2 eggs
- 3 tablespoons egg whites (46g)
- 8 ounces of apple (1 large or 2 medium or 3 small apples)
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- zest of half a lemon
- 2 cups of Strawberries
- 2 tablespoons of Sweeteners
Start by placing the strawberries in a pot over medium to high heat.
It’s better if they are chopped. Then add the sweetener. Let it boil until you get that extra thick texture.
These will be your toppings.
Next, grind the whole oats into a blender.
You can also use an oat powder if you prefer, but grinding the oats yourself is cheaper.
Up next is to peel the apples.
Make sure that the skin is removed before you cut them into thin slices.
You can also go with grated apples if you want.
Making the pancake mix.
Get a big bowl and crack the eggs. You can do just the egg whites if you prefer the calorie to be lower while having a protein intake high.
Then add the sugar-free vanilla yogurt. And scrape the lemon zest into the bowl.
Also, add into the mix the vanilla extract before mixing them all together for a smooth batter.
Add the ground oats with baking powder and mix it all together again. You should now be getting the usual pancake consistency.
Now come the apples!
Incorporate your grated or sliced apples into the pancake mix before cooking.
Now off to the stove. Prepare your non-stick pan and preheat. You can use butter to oil up the pan but make sure you take into account its additional calories.
Then put the pancake mix into the pan in the amount you prefer, but they tend to turn out better if it’s in small amounts.
Wait for about two to three minutes in low heat before you turn them.
Wait for another two to three minutes before removing them from the heat. This recipe should make about 9 servings.
