What is it about watermelon that makes it so dang refreshing? There’s hardly anything better on a hot summer’s day, than biting into a cool, sweet slice of watermelon after a swim in the pool. It may please you to know however, that the refreshment factor of watermelons can be increased, not to mention the fun you can have eating them.

When you add ice into the mix, it’s a whole new level of refreshing.

Two ladies with a knack for creating delicious treats, are Ash and Tay.

On their YouTube channel “Twin Coast”, they make all sorts of delicious things, both sweet and savory. In one of their recent videos, they take the humble watermelon and boost it to a whole new level with a “watermelon whip”. It’s like a watermelon soft serve, meets sorbet, meets absolute delight.

And the best news: you only need three ingredients!

For two servings, here’s what you’ll need:

  • 2 cups of frozen watermelon
  • 2 cups of frozen strawberries
  • 1/4 cup nut milk of your choice

And if you want to get fancy, have a second melon on hand to use as a fruity bowl.

First, chop, chop, chop it up!

Slice your melon into wedges, and then carefully cut all the flesh out. Then, cut the flesh of the watermelon into cubes. The more even the size, the better.

Just chill out!

Lay the cubes on a tray, and place in the freezer. For the best (coldest) results, leave them to freeze overnight. Even now, these cubes are delicious cold snacks, but refrain from eating them, the best is yet to come. This is also a good time to make sure you’re freezing strawberries at the same time unless you can buy them pre-frozen.

What’s the scoop?

Before you get blending, prepare your watermelon bowls. Cut one watermelon in half, and scoop out all the flesh. Go ahead and eat this, or if you like, freeze it for your next batch.

It’s blending time.

Throw your frozen watermelon and strawberries into your blender.

Pour in the milk.

Nut milk that is. That could be almond milk, cashew or if you really want, you could use dairy milk too, but this will give a different, less complimentary flavor.

Now that’s what I call a spin class.

What a mix-up! Don’t worry, it’s the good kind. That is to say, mixing all of our delicious yet simple ingredients together.

Blend everything until the consistency is smooth.

It should have the recognizable texture of sorbet or soft serve.

Gently scoop that gloop.

Last but not least, scoop the whip into your hollowed-out watermelon bowls, and get ready to enjoy. Make sure to serve them quickly, as taking too long taking pics or Instagram will leave it all melted.
