Unstuffed Cabbage Roll Soup In Slow Cooker

The taste of unstuffed cabbage rolls in a delicious soup is just truly something special. Throw in some rice, cooked tomatoes, and some tasty beef and you’ve got a winner in the kitchen. Let’s take a look at how we’ll be using all of these ingredients and a slow cooker to create this savory dish.

We’re going to replace the white rice that is traditionally being used in cabbage roll soup by riced cauliflower. It’s a great variation to the traditional recipe and has a lot fewer carbs than white rice. You can either rice the cauliflower yourself or buy a factory-made package. This soup is definitely is a bit on the heartier side and shines in its simplicity. Although it doesn’t take long to prepare, cooking time can take a few hours. Up next, the ingredients.

What you’ll need (6 – 8 servings)

  • 5 cloves of garlic [$0.40]
  • 1 onion (diced into small pieces) [$0.50]
  • 2 lbs. of ground beef [$8]
  • ½ head cauliflower (riced) [$1]
  • 1 small cabbage (sliced) [$1.50]
  • 1 tablespoon olive oil [$0.05]
  • 1 teaspoon dried thyme [$0.05]
  • 1 teaspoon dried oregano [$0.10]
  • 1 teaspoon salt [$0.08]
  • ½ teaspoon pepper [$0.05]
  • ¼ cup of chopped parsley [$0.25]
  • 1 16-ounce jar of marinara sauce [$1.50]
  • 5 cups of water [$0]

With an average cost of $1.69 per serving, this dish isn’t only luscious, but it’s quite affordable as well! Preparation time is only 20 minutes, while cooking time is 4 hours.

Cooking instructions

  1. Heat up some olive oil in a large pan, and throw in the pieces of onion and garlic. Let it cook for a good five minutes, right until the onions have are tender.
  2. We’ll add the ground beef next, let it cook in the pan until the beef is browned sufficiently. You might have an excess of fluids, but you can drain if needed.
  3. Time to spice things up! Add the thyme, oregano snipped parsley and finish with the traditional salt and pepper.
  4. Take the whole mixture and put it into a slow cooker, preferably 6-quart.
  5. We’re going to add the rest of the ingredients next to give our dish a lot more flavor. Add and mix the marinara, water, cauliflower, and cabbage.
  6. Put the lid on the slow cooker and let it simmer for four hours.
