What follows a sumptuous meal?
You guessed it right. Dessert!
Most of us don’t feel satisfied with our meal if we don’t get a serving of something sweet right after. For one reason, it is often out of habit. Maybe it started with your childhood that you’re used to having a sweet treat for finishing your meal.
Physiologically speaking, it can also be because of an unbalanced meal.
If your meal is full of starchy foods, your blood sugar will tend to shoot up, then a sudden decline. That sudden drop is what will make you crave something sweet a few minutes after. However, diets that restrict sugar intake are also one that would cause to crave for it even more.
This can also be because of a brain chemical called serotonin.
Serotonin is often associated with an elevated mood. After a fine meal, we want to cap it off with something sweet to make us feel happier or calmer. All these explanations aside, it’s okay to give in to your cravings occasionally.
Try this Egg Rice Cake recipe for a nice touch of sweetness after your meal.
Here are the ingredients that you will need:
- 4 Egg yolks
- 3 1/8 tbsp Granulated sugar
- 10 ¼ tbsp Non-glutinous rice flour
- ¼ tsp Salt
- 5 oz. Milk
- 1 tsp Melted butter
There are a few alternatives that you can do with this set of ingredients.
You can use egg whites instead of milk, but you must beat them until they are light and foamy. You can also add 2-3 drops of vanilla for flavor and aroma. Lastly, you can replace the non-glutinous rice flower with a glutinous one, but you must add 4 ½ teaspoons of starch powder.
If everything is ready, it’s time to get things started.
First, place all the yolks in a pan.
Pour in the sugar and mix until they blend into a creamy, smooth texture.
Add the flour, salt, milk, and butter.
Mix them all until there are no more lumps. Once the mixture is clear of any lump, turn on the stove and cook in medium to low heat.
From this point, you need to just keep on stirring the mixture in the pan.
Yeah, it might get monotonous or tiring, and you might wonder if you’ll ever get to that consistency of a rice cake. Don’t worry; you’ll get there.
In time, the mixture will start to lump up and solidify.
Keep on stirring until the mixture forms into a thick, sticky, and dough-like consistency. Turn off the heat and transfer it into a dish.
Use a spatula to fold the sides and smoothen the mixture.
Simply pat the sides and form into a rectangular shape. Spread or pat it a little to smoothen the top. You can repeat this process until you get the shape and texture that you like.
Cut the cake dough into even cubes.
To add a little whimsy to it, roll the cubes into a ball to make it look like the egg yolk these yummy treats came from.
Chill inside the refrigerator for 20 minutes or so to make it chewy.
