Mixing potatoes with egg is one sure-fire way to turn the simplest ingredients in your pantry into a delicious meal, good for breakfast, lunch, and dinner. Not only does using these two ingredients always result in a tasty meal, but a cost-effective one too. Eggs and potatoes are both super cheap, so knowing how to use them to make quick and simple dishes is a fantastic way to whip up a meal that won’t empty your pockets.

One delicious recipe you can toss together very simply is this amazing dish from a fantastic recipe channel.

Lieblingsrezepte is a YouTube food vlogger who always has a creative twist to put on meals that anyone can make. Sophie is the Masterchef of the channel, and in this recipe, she shows us a fun twist on a breakfast classic.

It’s potato, it’s egg, it’s all flavor. What’s not to love?

Here’s what you’ll need:

  • 1/2 potato per dish
  • 1 egg
  • butter
  • salt
  • pepper
  • parsley
  • parmesan

First things first-

Get some water on high heat and to a rolling boil. Once the water is ready, drop the potato in and boil it until it’s tender, but not too soft.

It’s a-peeling process.

Remove your potato from the boiling water, being careful not to burn yourself. You may need to wait a few minutes for the potato to cool down before proceeding to the next step, as it will likely still be very hot. Peel the potato, removing the skin with either a peeler or carefully with a pairing knife.

This next step is grate!

Get out your cheese grater and put it to use on something that is not cheese. Grate your softened, peeled potatoes, being careful at the end not to cut your fingertips.

Do you have the skillet skill set?

Melt approximately a tablespoon of butter on a skillet over medium-high heat. Once it’s fully melted, put half of your grated potato in the center, and flatten to create a patty shape.

Fry until the potato is golden brown, this should take three to four minutes. Then, flip over the potato hash patty and fry the other side for the same length of time.

Make a hole in the center of the hash patty. Next, we’re going to break an egg into the hole, and leave that to fry. Here, you can fry to your personal taste, but sunny-side up.

T’is the season(ing).

Add salt and pepper to taste. Next, sprinkle some finely grated parmesan over the frying egg. This should melt and add a lovely savory flavor to the dish. Lastly, roughly chop parsley and sprinkle it over to garnish.

And that’s it!

Remove the egg from the skillet, and hey, you’re ready to serve! As with any simple dish, you can customize it any way you want! Make the dish your own by seasoning with paprika, garnish with fresh basil or a few slices of chili for some extra heat.
