It starts with a gooey white chocolate and hazelnut cream filling, rolled up in layers of chocolate ice cream and chocolate rice Krispies. The entire thing is then topped with a rich chocolate hazelnut ganache, which adds a nice crunch.

These are the ingredients you’ll need to prepare for the “Ferrero Rocher Ice Cream Log.”

For the white chocolate hazelnut roll:

  • 1 cup of peeled hazelnuts
  • ⅓ cup of heavy cream
  • 10 ounce of white chocolate (chopped)

For the chocolate rice Krispies:

  • 3½ cups of marshmallows
  • ½ stick of butter
  • ¼ cup of cocoa powder
  • 5 cups of Rice Krispies cereal

For the ice cream layer:

  • 1 gallon of chocolate ice cream

For the chocolate hazelnut ganache:

  • 16 ounce of dark chocolate (tempered)
  • 1⅓ cups of hazelnuts (chopped)

These are the steps you’ll need to follow.

Step 1: To start the white chocolate hazelnut mixture, heat the hazelnuts in a saucepan until they are lightly roasted. Add the heavy cream and allow the mixture to a gentle boil. Stir in the chopped white chocolate until everything is well mixed. Remove the saucepan from the heat and chill the mixture to 85 degrees Fahrenheit (29 degrees Celsius).

Step 2: Curl a piece of parchment paper and place it inside into the paper towel roll.

Using parchment paper, cut out a small square piece, cover one of the paper towel roll’s apertures, and fix it in place using a rubber band.

Step 3: Pour the white chocolate hazelnut mixture into the paper towel roll until it reaches the top. Then seal the open end with another square piece of parchment paper and a rubber band.

Transfer the filled paper towel roll to the freezer and freeze for at least two hours.

Step 4: To have the chocolatey effect of the rice krispies — melt the butter, marshmallows, and cocoa powder in a double boiler.

Pour in the Rice Krispies cereal and mix until everything is well blended.

Step 5: Scoop and put the chocolate Rice Krispies mixture evenly over a piece of parchment paper.

Cover it with a second piece of parchment paper, and use a rolling pin to roll and flatten out the mixture to have a rectangular shape.

Step 6: Remove the frozen white chocolate hazelnut roll from the freezer, remove the paper towel roll as well as the parchment paper, and lay the roll on top of the chocolate rice Krispies.

Step 7: Roll everything up into a tight log using the parchment paper beneath the chocolate rice Krispies layer.

Place the log in the refrigerator and let it harden completely.

Step 8: Over a piece of parchment paper, spread an even layer of chocolate ice cream. Use a non-sticking roller or spoon to spread the ice cream and flatten it into a rectangular shape. Place the ice cream layer in the freezer for a few minutes.

Step 9: Remove the ice cream layer from the freezer. Place the chocolate rice Krispies roll above the ice cream layer. Use the parchment paper under the ice cream layer to help roll everything up into a snug, thick log. Place the Ferrero Rocher ice cream log in the freezer overnight.

Step 10: The next day, temper the dark chocolate and whisk in the chopped hazelnuts to make the chocolate hazelnut ganache. Take the Ferrero Rocher ice cream log out of the freezer, drizzle it with chocolate hazelnut ganache, and enjoy!
