Here’s what you need:
- 12 ounces of fettuccine
- 1 pound of sirloin steak
- 2 tablespoons of butter
- 2 minced cloves of garlic
- 2 tablespoons of all-purpose flour
- 2 cups of milk
- 1 tablespoon of freshly chopped parsley
- 1/2 cup of freshly grated parmesan
- 1 1/2 cups of halved cherry tomatoes
- 2 cups of baby spinach
- balsamic glaze
Here’s what you do:
1. First, get a large pot and fill it with water and a pinch of salt. Bring it to a boil and cook your pasta in it following the package directions until the noodles are cooked al dente. At that point, drain the noodles and set them aside.
2. Once your pasta is ready, you can get ready to prepare your steak. Before anything else, season it generously with salt and pepper and get a skillet going over medium-high heat. Once it’s hot enough, throw your steak in and cook it until its done to your desired level—for medium-rare, cook it for about three minutes per side. Once it’s done, take it off the heat, let it rest for 10 minutes and then slice it up thinly.
3. Now, make your alfredo sauce. Get your skillet and throw butter in it, letting it all melt. After that, add your minced garlic and cook it for about a minute. Whisk in your flour and cook it for another minute, adding in milk and simmering it all until it thickens. Keep working it over the heat for about five minutes before throwing in your parsley and parmesan as well. Finally, add in your tomatoes and cook it all down for two more minutes.
4. At the end of everything, throw in your cooked pasta and toss it until it’s evenly coated. Add in your spinach and toss it in the pasta and sauce until the leaves wilt. Once that’s done, add in your sliced steak, drizzle it with balsamic glaze and you’re ready to serve!
