We’ve all heard of banana bread but have you ever tried banana cake? For many of us, the answer is probably no. Regardless, we all love the soft, sweet and somewhat earthy flavor of banana bread—so why not take that flavor profile even further? If you’ve never had it, banana cake is just a little bit lighter and fluffier than banana bread that you’re used to. And as an added plus, this recipe doesn’t even use any flour, milk or sugar! But enough talking—let’s get started.

Here’s what you need:

  • 4 ripe bananas
  • 1 cup of olive oil
  • 4 eggs
  • 1 1/2 cups of finely cut oatmeal
  • 1 cup of raisins
  • 2 tablespoons of baking soda
  • cinnamon (to your liking)

Here’s what you do:

1. First, preheat your oven to 350 degrees. After that, mix together your bananas, eggs and olive oil either by hand or with an electric mixer. Keep going until the batter turns smooth and uniform. At that point, add in your raisins and fold them into the mix. Finally, throw in your oats, cinnamon and baking soda. To determine how much cinnamon to add, try giving your batter a little taste to make sure its ok.

2. After that, get a cake pan and grease it down. After that, coat the sides of it with oatmeal. After everything is evenly coated, add in your batter. If you want to make it even more decorative, get another banana and slice it up finely. Decorate the top layer of batter with the slices. When you’re all done, throw it in oven for 35 minutes.

3. Once the time is up, use the toothpick test to make sure your cake is fully cooked through. If the toothpick comes out clean, you’re ready to eat!

As you can see, the core recipe for this banana cake is about as easy as it gets. Even better than that, it doesn’t use flour, milk or any extra sugar at all. Regardless of how stripped down the ingredients are, the result is a moist, sweet and fluffy cake which is a perfect dessert for a hot summer day. If you’re looking for a delicious alternative to banana bread, this is definitely worth a try.

As always, you can definitely tweak this recipe to suit your own needs as well. If you don’t like raisins, feel free to leave those out—and also feel free to adjust the amount of cinnamon as necessary. On the other hand, you can also add in a little bit of vanilla or even nutmeg into the mix to add a little more spice to the mix. As with banana bread, you can also feel free to use bananas that are overly ripe in your batter as they will only heighten the flavor of the cake in the end. Although the original cake doesn’t have any extra sugar added… we won’t tell anyone if you add frosting on top as well. Above all, enjoy this recipe and have fun with it.
