Here’s one recipe that some have tried to make to replace a good old crepe. But instead of using all that flour, milk, and butter, you make them with spinach and rolled oats.

Yes, you got that right. You can make some crepe batter out of spinach.

It is mainly made up of water but packed with vitamins and minerals. This crepe recipe works just like the ordinary crepe recipe because of the rolled oats that you mix it with.

Rolled oats are starchy, so it creates the consistency of any batter made with flour.

The combination of spinach and rolled oats create a crepe rich in fiber and multiple plant compounds that benefit eye and heart health.

Here are the ingredients you need:

  • ¾ cup spinach
  • ¾ cup rolled oats
  • 2 eggs
  • 2 cups water
  • Black pepper
  • Salt
  • Cheese

First, wash and chop your fresh spinach.

You can place it in a bowl or straight into the blender. Pour in the rolled oats and add two eggs. Then, pour 1 cup of water.

Blend everything until the spinach is completely crushed and mixed.

Let it sit for 30 minutes. After that, season the mixture with salt and pepper and add another cup of water. Blend it again for a few minutes.

Your spinach crepe batter is ready to cook.

Heat a wide, shallow pan and grease it with butter. Pour enough batter and spread it around the pan by circling it until it covers the entire area. Make sure that it is just thin enough, like a crepe.

Once the batter is cooked, sprinkle some cheese on top.

You can use mozzarella cheese for this recipe. Others used feta or Havarti cheeses. Sprinkle the cheese on one-half of the crepe only so it won’t get too messy later.

Fold the other half of the crepe over, covering the cheesy part.

Give it a little tap and cook it for a few more minutes or until the cheese has started to melt. Once done, place it on a plate and cool down for a bit.

You now have a guilt-free healthy spinach crepe that you and your family can enjoy. Of course, you can always add some tasty fillings to round it out, like chopped ham, bacon, tomatoes, or mushrooms. Really the options are endless.
