Cooking can become tedious when you’re pulling out pots and pans and have several this going on different burners to create your dinner and side dishes. But not with a slow cooker.
With a slow cooker you cook everything in just one pot, which also means that there are less pots, pans, dishes, etc. to clean. You can cook up some perfectly tender chicken along with a flavorful rice in a slower cooker.
And this chicken and creamy mushroom rice dish does not disappoint.
This recipe takes 10 minutes to prep, 4 hours to cook and serves four.
Ingredients:
- 8 Chicken Drumsticks: $4.72
- 1 can (10.25 oz) Cream of Mushroom Soup: $1.29
- 2 4oz. Cans of Drained Sliced Mushrooms: $1.96
- 2 Cups of Milk: $1.78
- 1 Minced Garlic Clove: $0.08
- 2 Tbs. of Minced Onions (with leftovers): $2.44
- 3/4 Cup of Jasmine Rice (with leftovers): $2.82
- 1/4 Cup of Grated Romano or Parmesan Cheese: $0.48
- 2 Tsp. of Salt: $0.05
- 2 Tsp. of Pepper: $0.05
- 1 Tbs. of Oil For Browning: $0.11

Step 1) Heat oil in a large skillet over medium-high heat and toss in your chicken drumsticks. Let them brown on all sides before you place them on a dish.
Step 2) Toss your mushrooms, onions, and garlic into the skillet and let them brown.
Step 3) Take your skillet off of the heat. Pour your soup can into the skillet and slowly stir in your milk so that the mixture becomes smooth. Season your soup with salt, pepper, and grated cheese.
Step 5) Stir your rice into the soup mixture.
Step 6) Once everything is evenly mixed together, you can pour your soup/rice mixture into your slow cooker, which should hold at least 5 to 6 quarts. You can also use a casserole crock pot that has a 13 x 9 baker.
Step 7) Place your drumsticks on top of your rice. You may have to layer your soup and chicken depending on how big your slow cooker is.
Step 8) Cook your chicken and rice in your slow cooker on high for three to four hours or until your chicken is cooked through and the rice is tender and creamy.
Step 9) Pull your chicken pieces out of your slower cooker and plate into servings. Use a serving spoon to scoop out your rice and put it on your plate alongside the pieces of chicken.
If you just want a creamy delicious side dish you can totally ditch the chicken and just make the rice with the mushroom soup. Your taste buds will surely thank you and so will everyone else at your dinner table.
