This Cinnamon French Toast Casserole Is Amazing
This is so easy to make and just might be your new favorite breakfast.

Even with the best intentions, it’s hard to eat enough vegetables throughout the day. Still, it can be particularly challenging to get little kids to eat vegetables, no matter how good they are for them. One of the biggest offenders just might be green peas. Although they are undoubtedly a good thing for us to eat, they have a distinct taste that can be pretty unpleasant for little kids. Fortunately, we have a great recipe that will help your little ones get these things down.

Today, we’re making a creamy bacon pea salad that is one of the best things we’ve eaten in a long time. Though it’s mostly made up up of peas, it also works in some nuts for texture, some bacon for flavor and crunch and some creamy ingredients to tie it all together. No matter how old you are, this recipe is sure to be a hit with the entire family. So let’s get started.

Here’s what you’ll need:

Salad:

  • 1 10-ounce package of frozen garden peas, cooked and cooled
  • 6 slices of bacon, cooked and crumbled
  • 1/2 cup of chopped pecans

Dressing:

  • 1/4 cup of mayonnaise
  • 1/4 cup of plain sour cream
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of freshly squeezed lemon juice
  • 1 tablespoon of honey
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper

Here’s what you do:

1. To start, get a medium bowl and whisk together your mayonnaise, sour cream and mustard. Mix these ingredients together first before adding your lemon juice and honey. Stir again until it’s all evenly combined. After that, add some salt and pepper to taste.

2. After that, out a large bowl to mix the salad together. If you haven’t already. Cook and drain your peas and fry your bacon as well, crumbling it up into bite-sized pieces. Be sure to chop up your pecans to your desired texture as well.

3. When all the ingredients are ready, throw them all in the bowl and pour your dressing over it. Use a big spoon or some other stirring device to toss it all together so that they ingredients are evenly coated.

4. Once everything is combined, pop the entire bowl in the fridge to let it cool for a while. After it’s cold enough for your liking, pull it out and serve!

Although peas still play a major role in this recipe, it’s easy to see just how delicious this recipe is compared to some other veggie preparations. After all, bacon is always delicious no matter what recipe it’s in. The creamy texture works well to add some flavor to the peas and the crunch of the nuts and the bacon add enough texture to make the whole thing come together nicely. If you’re already a fan of peas in the first place, this just might end up being your new favorite recipe.

Although the basic elements of this recipe work very well together, you can always experiment with this as you see fit as well. If you want a little more meaty flavor, you could add in some finely chopped ham to take thing up a notch. On the other hand, you could add in some of your own seasonings.
