Cookies are such a sweet treat during The Holidays.
Even more so when they’re homemade.
Today we’re sharing one of our favorite cookie recipes out there, the chocolate-covered Ritz cracker cookies.
This recipe only needs 4 ingredients.
- 1 24oz Package of Almond Bark (Chocolate or White Chocolate)
- 2 Large Sleeves of Ritz Crackers (more or less)
- 1 Cup of Peanut Butter (approximately)
- Heath Pieces or Kosher Salt
Start with laying down the Ritz crackers topside up on a table with a piece of parchment or wax paper.
Using a pastry bag or ziplock bag, put your peanut butter inside the bag and squeeze until all the air is out.
Then cut a fairly large hole in the corner of the bag.
You have a makeshit piping bag.
Next, squeeze a dollop of peanut butter on top of the Ritz crackers one by one.
No need to spread.
Once the peanut butter is added to all of the crackers, take another set of crackers to put on top like a sandwich.
Keep the topside down facing the peanut butter. This time, the peanut butter can be spread out by squeezing the two crackers.
Next up is Almond Bark.
You can also opt to use the White Almond Bark as they are equally as delicious and great for Christmas due to the color.
Use about six blocks of these and put them in a microwave-safe bowl.
Put the bowl into the microwave for about 2 minutes or when the chocolates are melted evenly and perfectly smooth with no lumps.
To cover the crackers with chocolate, place them one at a time in the bowl.
Now grab a couple of forks.
Use forks to turn the crackers upside down until all of it is covered, then remove them from the bowl.
Do this for every cracker “sandwich”.
It’s best to use a fork when dipping the crackers since the excess chocolate can easily drip when you take out the crackers.
We now set the toppings.
Use Heath pieces or kosher salt, depending on your preference. Just sprinkle them on top.
The best way to put these toppings is when you finished dipping a batch (one row) of your crackers.
The chocolate is still not yet dry and the toppings will stick.
Once all the rows are done, we will keep them on the table until the chocolate sets and dries.
It’s okay to let them dry outside the refrigerator so the shine will still be there.
2 hours would be enough for the chocolate covering will settle. And there you have it!
