Gatherings and dinner parties call for dishes with bigger servings.
It’s always nice to host a party, but it can be stressful at times. Cooking for more people can be daunting because you don’t know if the food will be enough for everyone.
This is where casserole dishes are a hit.
People run to casserole dishes for bigger parties. Cooking in a deep, wide pan and baking a dish can help speed up the preparation. While you place it in the oven to cook, you can make other dishes on top of the stove.
Another dinner party problem is dietary restrictions.
We always want something that would satisfy our guests. Vegetable dishes tend to be so bland and without flavor. So how do you find a middle ground between a healthy yet tasty dish?
Here’s the solution: how about this baked veggie casserole for your guests?
It’s a perfect dinner party dish. It’s healthy, easy to prep and cook, and one casserole serves more or less ten people! Plus, it is tasty and super delicious; you could never go wrong in serving this meal.
First, cook the vegetables. Here are the ingredients:
- 2.2 pounds broccoli
- 1 teaspoon of salt
- 1 tablespoon of milk (powdered)
- 1 red pepper
- 3 long green peppers
- 1 onion
- 3 tablespoons of olive oil
Cut the broccoli heads from the stem.
Fill a pot with enough water to immerse the broccoli. Put in medium heat until it starts to simmer. Place the salt and milk, then the broccoli. Let it boil for 7-8 minutes.
Meanwhile, cook the remaining ingredients.
In a pan, sauté the vegetables and pour the olive oil. Cook until they are soft enough.
Using a baking or glass tray, brush some vegetable oil all over its surface.
Then, place the cooked broccoli and vegetables on the tray. Mix until the vegetables are evenly distributed. Set aside and prepare to make the sauce.
For the sauce, you will need the following:
- 3 eggs
- 2 cups of milk
- 5 tablespoons of olive oil
- 4 tablespoons multi-purpose wheat flour
- 1 teaspoon of salt
- 2 teaspoons baking powder
- 1 tablespoon of dill
Beat the eggs inside a mixing bowl or large graduated cup. Then, mix the remaining ingredients in the bowl until there are no more lumps.
Pour the sauce to the tray of vegetables.
Make sure that you pour the sauce equally all over the tray. You can stir the vegetables and sauce for a bit and make sure everything is spread evenly.
Then, top it with 3.5 ounces grated cheddar cheese.
Bake it in the oven at 392 degrees Fahrenheit for 25 minutes.
And there you have it!
