Everyone knows that when it comes to rounding out a good meal, the sides are just as important as the main dish.
Sometimes, though, choosing that right side can be a tricky affair. After all, the flavors have to meld in such a way that it leaves your dinner guests craving more.
Well, we’ve found the perfect recipe for you- garlic mushrooms!
The beautiful thing about these babies is that they go alongside just about everything you can imagine, save for maybe dessert.
Even so, if you have garlic and mushroom lovers in your life, they may just pass up dessert to score a second or even third helping of these juicy, flavor-packed buttons of yum!
Another fantastic fun-fact that makes these mushrooms one of our top sides of choice is how insanely easy they are to make, and incredibly fast to cook up, to boot!
These delectable little bites can go from pan to table in 10 minutes!
None of this is to mention that it only takes a handful of simple ingredients.
Before we get started, here’s what you’ll need:
- 1 lb of fresh button mushrooms or cremini mushrooms (the brown variety of buttons)
- 1/2 a stick of butter (4 Tblsp.)
- 1 Tblsp. of delicious bacon grease (if you don’t have bacon grease handy, just use cooking oil)
- 1/2 to one small onion, chopped (you can also use shallots, or just leave the onion out altogether)
- 5 cloves of fresh minced garlic
- 2 Tblsp. of dry white wine (broth can be substituted, or if you like a sweet taste, apple or grape juice)
- A hearty pinch of chopped fresh thyme
- 2 Tblsp. of fresh parsley, chopped
- Salt and pepper
Prepare yourself- your house is about to smell drool-worthy!
The first thing that you’ll do is clean off your mushrooms. Now, there’s a whole lot of controversy out there on the best way to clean them.
Some say to simply rub off the dust with a paper towel and that’s it. We like to give them a quick rinse first, however. While many people say this will make them slimy- really it’s all in the timing. So, use a paper towel to clean off your mushrooms first.
Melt your butter and bacon grease (or oil) in a frying pan over medium-high heat.
Make sure the pan is large enough to hold all your mushrooms without piling them on top of each other.
As your butter melts, rinse off your mushrooms and quickly pat them dry with paper towels.
Next, add your onions to the pan.
Let them cook, stirring occasionally, until they begin to turn translucent and fragrant- roughly 3-4 minutes.
Now you can add your mushrooms to the pan.
Stir them lightly to coat with the butter, grease, and onion. Allow them to cook until they take on a golden brown color and when the edges just start to crisp up.
After the mushrooms have lost some of their moisture, they will begin to shrink. Give the pan a gentle shake as they do to keep them from sticking and to make sure they’re getting even heat distribution.
Next, add in your wine, and let it cook for 2-3 minutes, or until it has reduced slightly
After the wine has reduced, add the thyme, half of the parsley, and the garlic.
Give it a quick stir and let it continue cooking for a little less than a minute- until the garlic and herbs open up and become fragrant.
Then all that’s left to do is season to taste with salt and pepper, and sprinkle the remaining tablespoon of parsley over the mushrooms for garnish!
