Pancakes are one of those foods that you just have to get right. There’s a fine line between fluffy and slightly crisp, and soggy or burnt.
Learning how to make the perfect pancakes comes with practice, but a big part of the outcome comes down to the recipe you use.
There are thousands, if not millions, of pancake recipes out there, so which one do you choose?
We’ve done the hard work for you – we’ve sifted through the good, the average and the bad, to bring you this: the fluffiest and most delicious pancakes recipe known to man.
For this recipe, you’ll need a good-quality pan or griddle. There’s no use using a cheap pan that sticks, or you’ll end up with more pancake stuck to the bottom of the pan than on your plate.
This recipe makes enough pancakes for 3 to 4 people. If you have more or less mouths to feed, just halve or double it!
Place your pan or griddle to the side for now, then measure out a cup and a half of all-purpose flour into a mixing bowl.
Next, measure 4 teaspoons of baking powder into your bowl with the flour. It might seem like a lot, but it’s what will give your pancakes the perfect texture.
Finally, add a pinch of salt to your ingredients.
You might also want to add around a tablespoon of sugar, unless you prefer to add all your sweetness in the toppings.
Mix the dry ingredients to combine, then set the bowl to the side. In a separate bowl, crack in one large, free-range egg, followed by a cup and a quarter of milk. To this, add a quarter cup of cold, melted butter.
Mix everything together, then add half a teaspoon of pure vanilla essence if you wish.
It’s now time to incorporate the ingredients together. Make a well in the flour and pour in the egg mix. Mix until you can’t see any large lumps.
If you fancy adding any additional flavorings, like blueberries and chocolate chips, do it now!
Finally, you can make the pancakes. Set your pan on a medium heat. Make sure to wait for two minutes for the pan to warm up, then lightly grease with butter.
Scoop out about a third of a cup of batter and pour into your pan. Let it spread on its own and cook for a few minutes.
Flip your pancakes when you can see air bubbles along the surface. You can always use your spatula to lift the side and check the color underneath if you’re not sure.
Cook for a few more minutes on the other side, then repeat with the rest of your mix. And voila! You should get about 6 or 7 perfectly fluffy, crispy, nicely-browned pancakes out of this recipe.
Top your pancakes with maple syrup, or any of your other favorite toppings. Delicious!

- 4 tsp baking powder
- 1/2 tsp salt
- 1 tsp sugar (optional)
- 1 egg
- 1 1/4 cups milk
- 4 tbsp butter melted
- 1/2 tsp vanilla essence (optional)
Instructions
1. Take a large mixing bowl and combine the flour, baking powder and salt. Add sugar if you wish.
2. In another bowl, mix the egg, milk and vanilla essence. Add the melted butter and mix with a fork.
3. Make a well in the flour mix and pour in the egg mix. Fold with a spoon until there are no more large lumps.
4. Heat a high-quality pan over a medium low heat, then lightly grease with butter.
5. Add about ⅓ cup of the pancake mix into the pan and let it spread on its own.
6. Cook for about 2-3 minutes each side, then repeat with the rest of the mixture.
7. Stack the pancakes and serve them with your favorite toppings.
