Do you have a favorite French recipe? If you consider yourself a foodie at all, chances are you use plenty of French cooking techniques in your own cooking and have a list of recipes that you like. One of the more iconic and delicious French recipes is French onion soup. If you’ve never had it, this onion soup is a rich, savory and sweet dish that comes topped with bread and bubbling cheese as well. Still, it sometimes takes a long time to make. Fortunately, we have a twist on this classic meal that you’re sure to love.
That’s right, today we’re going to make a delicious French onion chicken dish which has all the same flavors with a base of chicken breast instead. Unlike the soup dish that it’s based on, this recipe can be made in about a half hour. Topped with perfectly caramelized onions and gooey cheese, this recipe is sure to become a new favorite of yours. So let’s get started.
Here’s what you’ll need:
- 2 medium yellow onions, sliced thinly
- 3 tablespoons of butter
- 4 boneless, skinless chicken breasts
- 1 cup of beef broth (plus three tablespoons of broth)
- 1 tablespoon of oil
- 1 teaspoon of Italian herbs
- 2 tablespoons of flour
- 4 slices of provolone
- 4 slices of Swiss cheese
- 3/4 cup of parmesan cheese
- fresh thyme, parsley and black pepper
Here’s what you do:
1. To get started, preheat your oven to bake at 400 degrees or to broil on a low heat. Once that’s done, get out an oven-safe skillet and melt your butter over medium-high heat. Next, add your thinly sliced onions along with three tablespoons of beef broth and sauté your onions for three to four minutes. Keep cooking and stirring it so that nothing burns, cooking for about 15 minutes. Transfer the onions to a bowl and cover it to keep it warm.
2. As the onions cook, prepare your chicken by drizzling the breasts with oil and seasoning them with salt, pepper and Italian herbs. With the onions done, put your chicken in the pan and cook it for four to five minutes per side. Make sure the meat is browned on each sides, though it doesn’t need to be cooked through.
3. After that, transfer the chicken to a plate and cover it up. Put your onions back in the pan and sprinkle in your flour, stirring it all in for a minute over medium-high heat. Add your beef broth and keep cooking it, stirring all the while until the mixture comes to a boil.
4. Next, top off your chicken with a slice of provolone, a slice of Swiss cheese and one quarter of your parmesan as well. When that’s ready, put the whole skillet in the oven and let it cook for 10 minutes until the chicken cooks all the way through and the cheese melts.
5. Check the chicken to be sure it’s cooked all the way through and spoon your onions and gravy on top of the chicken. Garnish it with thyme, parsley and fresh pepper and you’re ready to serve!
As you can see, all these ingredients are relatively simple and the actual cooking process takes very little effort. Still, the end result is an amazing dish that still has all the flavors of a complex French onion soup with way less time in the kitchen.
