Fried chicken quickly comes to mind. For our friends across the pond, maybe fish and chips. If your guess is much of the same, it’s totally understandable. After all, dunking something in batter and deep frying them is always a good idea.

For this recipe, you will need eggs, salt, broth powder, all-purpose flour, baking powder, and some water.

First, prepare the eggs.

In a large bowl, beat two large eggs. Add a quarter teaspoon of salt and half a teaspoon of broth powder. Mix the eggs until all ingredients are incorporated completely.

In a pan, heat a tablespoon or so of cooking oil. It is best to use a non-stick frying pan when cooking scrambled eggs.

Once heated, gently pour in the egg mixture. Lower the flame so the top and bottom of the dish can cook at almost the same time. Once done, set it aside.

Next, prepare your batter and flour dredge.

In a large bowl, mix 250 grams of all-purpose flour. Mix half a teaspoon of salt, ¾ teaspoon of baking powder, and a teaspoon of broth powder. You can also take this opportunity to season the dredge with pepper and paprika if you wish.

Take three to four tablespoons of your flour mixture and put it in a smaller bowl. Add four to five tablespoons of water to make it into a silky batter.

Now, let’s cook the eggs!

Put enough amount of oil for deep frying into a pot and preheat it to 190 degrees Celsius. Slice your eggs into equal parts. Dunk the sliced egg into the dry flour mixture then into the batter. Shake off the excess batter then dredge it into the dry flour once more to coat it.

Shake off the excess flour then dunk it into the oil. Once golden brown, fish them out and put them in an oil rack or a plate lined with paper towels to absorb the excess oil. Serve with sweet chili dipping sauce that you can buy in Asian stores or tomato catsup.
